Grilled Ginger-Peanut Pork Tenderloin

Great flavor. This turned out so moist. I did some research, because I don't have an outdoor grill. I ended up roasting the tenderloins at 375. They took probably about 20 minutes, but I wasn't counting minutes. I read as long as it hits 137 degrees it is safe, so I took it out at 140 and tented it for 10 minutes. Not a dry bit on the pork!

Really good - don't overbake. Loved the hint of almond flavor. Thought the texture of these cookies was superb. I halved the recipe as I didn't need that many!

Baby Greens with a Warm Gorgonzola Dressing

I subbed blue cheese in the dressing, b/c it was what I had on hand. I thought the dressing was really good. I ALWAYS use less evoo than called for b/c I like my dressings tangier and healthier. I wuold add some veggies or something though to make it more interesting. Or pears - that would taste really good against the strong cheese.

Warm Apple Buttermilk Custard Pie

Mmm. This was really good. I used a homemade pie crust b/c I love crust and the storebought ones are like cardboard. The only thing I noticed, and I NEVER think things are too sweet, was that the custard portion seemed overly sweetened - almost like candy. So next time I would reduce the sugar I think.

This was okay because I like salads in general. But this particular recipe didn't "wow" me. The dressing was lacking a kick and it was just a bit bland overall. But certainly good for getting my vitamins and potassium.

Cream Puff Cake

Super easy to throw together. I made this for people at church and they really liked it. The only thing is that my pan started overflowing. I only put 8 oz. of cool whip on top instead of 12 and that was plenty. Instead of hershey's syrup, I bought a can of choc. frosting. Following another reviewer, I spread a layer of it on the cake before adding the pudding mix. Then I heated up some of it to drizzle over top. I thin it needs the extra chocolate to be like an eclair.

This was okay, but I don't think I would make it again. The texture was not what I expected. It was oddly flaky. If I made it again, I would definitely add more salt. I also wonder how it would be affected by using less butter b/c this is a pretty fattening side dish as is.

Frosted Banana Bars

These were really great and moist. To me, they were a lot more interesting than regular banana bread. Per recommendations I used 3 bananas and I used the Whipped Cream Cream Cheese frosting recipe from this site.
