Roasted Pork Tenderloin
This was really good! I followed another reviewers advice and also added chopped apple and onion to the sauerkraut, 1/2 c water and 1/2 c apple juice and cooked it in the crockpot on low all day...pork was fall apart tender...my husband was afraid the sauerkraut would be overpowering, but it wasn't, it was delicious... but next time I would probably use half the amount of sauerkraut, there was enough sauerkraut left over to feed an army! Thanks for the great recipe, will definitely make again and again.

Chicken and Bacon Shish Kabobs
Ok, FABULOUS! I'm lazy though, I used a bottle of good teriyaki marinade, not cheap, probably cheaper to make it...also, I used someone's suggestion and boiled the bacon for 5 mins first...I've served this at several bbqs this summer and everyone LOVES it. Thank you!

Chocolate Eclair Cake
Ok, so easy and so fabulous! I made it the day before serving and used low fat honey graham crackers and light cool whip to cut back on fat and calories a hair...I was also lazy and just did chocolate frosting for the topping. My guests could not stop eating it, everyone, young and old, ate and ate and ate until the entire cake was gone. I have never once served a 9x13 size cake and had it completely disappear, I will make this one again and again, thank you!
