Bacon Wrapped Dates Stuffed with Blue Cheese

With a glass of zinfandel---omg. I used parmesan (cut into small chunks) instead of bleu. Will make again and may have to try them almonds too.

This is great. Very easy to make but it does make alot and since it's largely milk, you need to be sure to have some drinkers around!

King Crab Appetizers

After reading the reviews I doubled the crab, used the phyllo cups (Yes!), added some "heat" seasoning and squeezed a lemon over them before serving. The lemon is a MUST and they still needed more "oomph". (I used 1/2 t. blackening seasoning and could have at least doubled it.) The creaminess of the filling with the crunch of the phyllo is wonderful, you just need to punch it up a bit. I will make these again. (and probably add some lemon zest to the filling)

Crispy Rosemary Chicken and Fries

Used leg quarters---very moist. Cooked the chicken & potatoes on different pans, same amount of time---excellent results. Coated the chicken w/ the oil/herb mixture a couple hours before baking and would do the same (or overnight) next time---no lack of flavor.

Burgundy Pork Tenderloin

After reading the reviews I seared the pork first, sauteed some baby bellas to throw in at the end, used 1 cup each wine and beef broth and omitted the celery. The gravy did not get thick at all but had a great flavor. We thought it was good but guess we prefer our pork tenderloin done on the grill. Served w/ mashed potatoes and roasted asparagus---was a very nice meal.

Roasted Butternut Squash Soup with Apples and Bacon

This soup is definitely a labor of love! It's good but IMO, not worth the time and effort. I didn't know when to add the squash (and for all the work, you don't even really taste the squash---there's a ton of flavors going on!). The curry definitely adds something. I will keep looking for a squash soup recipe. sorry

Potato and Vegetable Frittata

Don't skimp on the spices! And the broiling step is essential---brown that cheese! I used fresh oregano on top after it came out of the broiler and that added alot. This is very good---good enough that it replaced a previous favorite of ours. I substitued spinach for the zucchini, provolone for the other cheeses, omitted the black olives and added a jalapeno. Don't be afraid to add some strong flavors to this.

Creamy Smoked Salmon Pasta

Excellent. In trying to recreate a recipe from a local restaurant, I omitted the mushrooms and added proscuitto. I also thought w/ skim milk and only 2T flour, the sauce might be runny. So, I added a little more flour and used evap skim milk. Guess what? My sauce was too thick. :) Next time I'll follow the recipe exactly. I'm not sure that you really need the parmesan cheese though..... Can't wait to have the leftovers! (even my 5 year old took some to school for lunch today!)

Quinoa and Black Beans

I used this as stuffing for some spicy red peppers, topped w/ pepper-jack cheese. I used barley instead of quinoa (yum) and added 2 cans of drained Rotel tomatoes (yum) and only used one can of the beans. Enjoyed by all.

Corn Dog Muffins

They stick to the pan! But they're good. After reading the reviews I omitted the sugar, doubled the cheese, used cheap hot dogs and cut them into slices and added a chopped jalapeno to half the batch. All good. I got 24 muffins.

Oven Fresh Seasoned Potato Wedges

I used red potatoes cut into chunks. Cooked more like 35 min. OMG! These are wonderful! They stuck to the pan but that was actually a good thing. The part that stuck was crunchy (not burnt) and the parmesan cheese (fresh, grated) browned--the bottom of the chunks were the tastiest. I won't spray the pan next time either. And there will be plenty of "next times." Thanks!

Blackened Tilapia with Secret Hobo Spices

I followed the suggestions in the review by "walela" and we all enjoyed it. Bought the jar of blackening spices, cooked outside (due to another reviewers suggestions because of the smoke) in a cast iron skillet. Very easy and spicy without being too hot. Will make again.

Easy Pesto

This was my first attempt at making pesto. Great base recipe. I doubled the garlic, halved the oil and added lemon juice. The garlic & oil are definitely personal flavor preferences but I think the lemon juice is essential. I will use this recipe every year I expect. Thanks.

Chipotle Shrimp Tacos

We had high hopes for this recipe, given the great reviews, but thought it was just okay. The spiciness & heat of the chipotle WAY overpowers every other flavor in the recipe. Once in a while you got a hint of bacon or a hint of shrimp but mostly you just tasted the chipotle. Too strong of a spice for the delicate flavor of the shrimp IMO. Sorry.
