Creamy Rice Pudding
Warning: VERY VERY SWEET! Nice consistency and easy to make but so sweet I couldn't eat it. Because of the ease of the recipe I might try again with much less sugar...maybe 1/2 of what the recipe calls for.

Southwestern Chicken Roulade
This was a hit with my teenagers and husband. I substituted crushed corn flakes for the masa harina...FANTASTIC! Loved the cornflake coating. In addition to the salsa, I served with sour cream on the side. The combination of the chicken and the chorizo/cheese filling was nice and balanced. Definitely had leftover filling, I could have made 8 breasts easily. Family already asking me to make this one again.

Greek Pasta and Beef
Tasty comfort food. Not the healthiest with all the butter and egg which is the reason I gave it 3 stars instead of 4, but a nice winter meal. I added about 1/2 cup of finely diced carrot to the meat/onion mixture and also sprinkled some chopped fresh spinach leaves before the final sauce layer. The carrot and spinach added some color and extra nutrition and did not change the taste at all. Final note, I found some of the directions a little confusing but worked it out. Good luck.
