Southwestern Chicken Pitas with Chipotle Sauce

Really, really good. I added garlic to the onion and bell pepper saute and only used 1 1/2 chipotle peppers and 3 tbsp peanut butter (instead of 4) in the sauce. For those of you who are as skeptical about the peanut butter as I was, don't be...it works and you can't really tell it's there. I think I would still stick with 3 tbsp peanut butter instead of 4, otherwise the peanut butter taste might be more obvious. Other than that, I followed the recipe exactly. I found that the sauce was still too spicy for my family's taste (even my husband thought it was too spicy, which is rare). I also thought there was too much sauce, you could probably cut the recipe in half. Then again, maybe if it were less spicy, we would have used more sauce. I loved the spices used on the chicken and I really enjoyed how everything tasted together. In the future I will probably use only 1 pepper, maybe even a little less. Thanks for the awesome recipe!

Tasty and easy, though not amazing or anything. I didn't pound the chicken, I was too lazy. :) But it still worked and we enjoyed them.

Rempel Family Meatloaf

Delicious! I had second and thirds, which never happens with meatloaf. I've always liked my mom's meatloaf but I can never make it as well as she does (there's no written recipe for it) so I went recipe searching. I really enjoyed this recipe, it's simple but flavorful and it wasn't dry at all (my meatloafs usually are). The only change was that I added some spinach, as another reviewer had suggested and I made mine in an 8x8 pan...so it technically wasn't a "loaf" but it was still good. Thanks for the recipe!

French Bread

I liked this bread, but I agree with some of the other reviews about its problems. It is a little too yeasty tasting, and not very fluffy (even though it rose beautifully) and airy the way most french bread is. I proofed the yeast with some sugar and didn't brush it with the egg white until I put it in the oven. I still thought it tasted pretty good and I loved the cornmeal on bottom and how crispy the crust was. It was also really easy to make, which is always nice. So anyway, it was good, but not the amazing french bread recipe I've been looking for.

Chicken a la Creme

Good, but not amazing. I think the dish needs a little more flavor. I added garlic powder, but I think in the future I would saute some garlic and maybe onion with the chicken. Also, the sauce never really thickened too much for me. I don't know if I didn't cook it long enough, but it was quite thin. Still good though, I'll just have to tinker with it next time.

Awesome Broccoli Marinara

I am always trying to find new ways to prepare it so that I can get myself to eat it broccoli. This recipe helped me be able to eat broccoli, so that's pretty good in my book. The tomatoes were a tad strong, but at least it helped mask the broccoli flavor! :)

Fry Bread Tacos II

These were pretty good. I've used frozen dough balls to make fry bread in the past, and I think they tasted pretty much the same as the ones in this recipe, and were way easier to make.

Black Bottom Cupcakes I

These were pretty good, though I was expecting a little more cream cheese flavor. I don't know if I just have a different definition of "dollop" but I thought these needed way more than a dollop of the cream cheese mixture. I was left with a lot of it and the cupcakes seemed to have hardly any of the cream cheese once they baked. I'd make these again, but just add a huge scoop of cream cheese to each cupcake. That was probably just my fault, not the recipes.

Lazy Lasagna I

This lasagna was delicious and easy! I did make a few minor changes though. First, I used ground beef instead of breakfast sausage, because that's what I had. I used an 8 oz package of oven ready lasagna noodles and omitted the water from the recipe. I made extra cottage cheese/sour cream mixture and added extra parsley. I will make it like this every time, it was so good (and I've never been a big fan of lasagna)! Thanks for the recipe.

Caramel Crunch Apple Pie

My husband is a pie fanatic, so I make pies for him all the time. This one was still sitting around after a week, which never happens...he usually eats them in a day or two. Anyway, he liked this one, but not as much as regular apple pie.
