Moroccan Tagine

Wow, this was delicious! I was rather skeptical, but I loved it. If I hadn't made some changes though, I probably would have given it 4 stars (it would've been bland). Aside from cutting up the veggies (dang butternut squash!) it was pretty easy to prepare, too. Like many others, I added some extra seasonings. 1/2 tsp cinnamon, 1/2 tsp turmeric, and 1 tsp cumin. I also added a full extra can of chicken broth because my vegetables were barely covered with just one can (I had rather large butternut squash and carrot though). I would probably do extra chicken next time, because the chicken tasted so good.

Black Bean and Corn Quesadillas

Wow, these are so tasty and easy! And cheap! It doesn't get better than that. Even my husband (a serious meat eater who grumbles every time we have a meatless meal) really enjoyed them. I added some cumin and fresh garlic and it was perfect. I think in the future I would cook them in the oven, as others have suggested, because they're kind of hard to make on the stove without making a mess. Will definitely make again!

Quiche Lorraine II

I was torn between a 4 star rating and a 5 star rating, but since this got RAVE reviews at the baby shower I took it to, I decided to give it a 5. I too decreased the milk to 1 1/3 cup, and it was perfect. Other than that, I didn't change a thing (oh, except how I baked the pie crust...make sure to poke holes in the bottom, then cover it with foil, then weight it down with pie weights or dry beans...otherwise it will puff up and shrink). People at the baby shower were telling me it was the best quiche they had ever had, and when I made one for dinner later that night, my husband and I ate pretty much the whole thing. ourselves. Yum! :)

Berry Shortbread Dreams

These are delicious, and I'm usually not a fan of cookies that don't have chocolate in them. :) I made these to include in my Christmas cookies plates and they got rave reviews from everyone. I also used vanilla extract (personal preference) and dusted them with powdered sugar because I ran out of time to make the glaze. They were beautiful looking and tasty! Also, I found it was easier just to use my thumb to make the well in the cookies rather than the spoon handle. Thanks for the great recipe!

Braised Balsamic Chicken

Soooo delicious! It's also very easy and quick to make, which I love. I served ours with plain couscous and it was great, the sauce is perfect on the couscous. I didn't (and wouldn't) change a thing. My husband, however, thinks the vinegar taste is way too strong (he tends to not like strong flavors like that) so if you're not in to tart, strong, vinegar flavor, I would reduce the amount of vinegar. For me though, it's perfect.

Chicken Makhani (Indian Butter Chicken)

Wow!!! What a fantastic dish. I almost licked my plate clean. It's really similar to the chicken makhani at my favorite Indian restaurant, which I now live 20 hours away from. :( Anyway, I used chicken breast because that's what I had. I also couldn't find ginger-garlic paste, so I used half a tablespoon ginger paste and half a tablespooon minced garlic. It also turns out I didn't have cayenne pepper, so I had to use ground red pepper (though I think the cayenne would've been better). Thank you so much for a good makhani recipe! We haven't been able to find a good Indian restaurant here in Texas and I've really been craving it.

Sherry Sour Cream Chicken

Delicious and easy! It's wonderful with some nice basmati rice. My husband even raved about it, and this isn't usually his kind of meal. The first time I made it, I used the rosemary and thyme but didn't really like the way they went with the dish. The second time I made it I omitted those spices and used garlic powder instead and liked it better. I also skipped the step of browning the chicken first and added the butter to my sour cream/sherry mixture so that I didn't have to dirty another pan. I think it tastes pretty much the same, but you just have to cook it in the oven a little bit longer. Thanks for the recipe.

Jay's Signature Pizza Crust

This is wonderful pizza crust! It is soft and chewy on the inside and crusty on the outside. I added minced garlic, parlsey, and onion powder and covered the bottom in cornmeal. This is the first homemade pizza crust I've liked!

Carol's Arroz Con Pollo

I thought this was quite tasty, but I had some issues. I used brown rice, which I think is why I had problems with the recipe. It took almost two hours to get the rice soft enough to eat. Once it was cooked though, it was delicious. I also used red bell pepper (I think green tastes like dirt) and low sodium chicken broth. So anyway, I think the issues I had were my fault, not the recipe's.

Lazygirl's Ground Turkey Stroganoff

I used ground beef instead of turkey (hubbie's preference), added a couple of cloves of garlic and a few tablespoons of sour cream. I still felt it was lacking, so I added some coriander, chili powder, and garlic powder. Even after all the additions, we thought it was pretty bland.

Creamy Pesto Pasta Salad with Chicken, Asparagus and Cherry Tomatoes

I too took this to a baby shower, and the guests really enjoyed it and asked me where I got the recipe. I didn't really change anything, I just used extra pesto (maybe almost double the amount called for...I love pesto) and I used marinated artichoke hearts. I think my only complaint would be that the dressing was a bit boring and the vinegar was too strong. I'd definitely make this again, just perhaps with a different dressing.

Garlic Butter

Delicious! I was looking for a sauce I could dip pizza and breadsticks into, and this worked really well. Since that's what I was using it for, I melted the butter and sauted the garlic in it. I also omitted the pepper and used garlic powder instead of garlic salt (though in the future I might do garlic salt). I was also a little hesitant about the paprika, but it gave it a nice little something extra. I liked this a lot for what I used it for and can also see how it would make fablous garlic bread.

Roasted Potatoes with Tomatoes, Basil, and Garlic

I thought this dish was good, though a little bland. I added zucchini and salt, and I think it really needed the salt. I also waited to add the basil until the last few minutes of cooking. When I took it out of the oven I sprinkled with lemon juice and paremsan, as others had suggested. Overall, it was pretty good.

Mayonnaise Biscuits

These were delicious and super easy. I didn't have any self rising flour, so I added a tablespoon of baking powder and 1/2 teaspoon of salt to my two cups of all purpose flour. I also added 1 tsp. of sugar and used reduced fat mayo. My husband, who ate his plain, said they needed more salt. I had jam on mine, so I thought they were fine.

Banana Pancakes I

I must admit, I didn't taste these pancakes--I hate bananas. However, I made them for my 16 month old, because I'm trying to get him to eat fruit. He really enjoyed them and I enjoyed how easy they were to make. The only changes I made were using half wheat flour, half white flour and only using 1 1/2 bananas. Thanks for the recipe!
