This was so easy and soooo tasty. I followed the recipe exactly, but used a stick of pepperoni that I cut up into small bite-sized pieces.

Spinach and Potato Frittata

This was very good. I used white potatoes and more spinach like other recommendations. I love making Frittatas. Just use what you have on hand. I have the perfect size large skillet. I cook everything in the skillet, pour on the eggs and pop it in the oven until the eggs are done.

Spicy Shrimp Fettuccine

Changed for an Asian taste. Used Thai Noodles in place of fettuccine. Used rice vinegar instead of Balsamic Vinegar. Everyone loved it.

Mini Pineapple Upside-Down Cakes

I made these to take to work. I am very pleased. I used the pineapple tidbits like suggested, and placed the cherry half upside down in the butter/brown sugar mixture, then surrounded by the pineapple. I also loosened around each cake with a knife before inverting. They are very moist. You will love them!!!

Skillet Balsamic Chicken

I was disappointed in the flavor, so I added some sugar and hoisin sauce, about 1/4 cup each, and that made a big difference, for the better. I would not make this again.
