Easy Spicy Chicken and Rice
This is a delicious quick dish to throw together after work, let it bake while you relax for a bit. Like some other users I used Rotel tomatoes and added some extras to taste - sour cream, onion powder and fresh garlic. At the end of the bake time, I topped it with French's Fried Onions and put it back in uncovered for 5 minutes. Added a nice little crunch! This is definitely going into the dinner menu rotation.

Chocolate Banana Cream Pie
This was a very easy pie to make and it's a great dessert option that doesn't utilize the oven. I made it with soy milk and heavy cream. The chocolate layer was much creamier than the bottom custard layer but I think that's because I used a whisk to mix the chocolate in and stirred the original mixture in the saucepan with a spatula. The whisking made a big difference. I had a 5 year old and an 8 year old helper and there were many steps that they could easily do. We topped it off with homemade whipped cream, more bananna slices and chcolate shavings. A hit with the whole family!
