Blackened Tuna Steaks with Mango Salsa

My fiance requested that I make tuna steaks, and I was a little nervous about it because the steaks were so thick. It came out great, though! I mixed the marinade together, placed the tuna steaks in a storage container, poured the marinade over the tuna steaks, and placed it in the refrigerator for less than an hour. The salsa was easy to put together. When it came time to blacken the tuna steaks, I soaked them in the spice mixture and then cooked them on each side for about six minutes on each side. There was still a nice pink in the middle. This recipe is a winner!

Prosciutto Wrapped Asparagus

Truly delicious. I couldn't find Neufchatel cheese, so I just used what I had on hand - sliced Swiss cheese. It was super easy, and because I left it in the oven longer than 15 minutes, the prosciutto had a nice crunch to it.

Eggplant Parmesan II

I've never made anything with eggplant before, but the guy I'm dating requested this. I must say, I enjoyed it (and I don't necessarily like eggplant) and it came out a LOT better than my chicken parmesan. I used jarred spaghetti sauce with mushrooms (which was great), a good amount of parmesan cheese, and only needed 2 cups of mozzarella for two layers in a standard-size casserole dish. I probably only needed one medium-sized eggplant. The double-dipping of eggplant in the egg and breadcrumbs was tedious, but worth the effort b/c I saw how much nicer those pieces came out than the ones I only dipped once. I put the eggplant on the baking sheets for 5 minutes on each side at 450 degrees and then baked everything all together for about 35 minutes. I served it with spaghetti noodles and bruschetta. I will definitely make this again, it was great.

Mexican Lasagna

I made this for a potluck last night and it was one of the few dishes that was almost finished. I think it had something to do with the fact that a lot of people had made pasta and seafood dishes, and this was a welcome change. While I browned the ground beef, I opened the can of diced tomatoes and poured the juice onto the bottom of the casserole dish so that the tortillas wouldn't stick. In addition to the ingredients listed, I also added a layer of refried beans and sour cream. Instead of Colby cheese, I used 2 cups of 4 Cheese Mexican. Great recipe, what a crowd pleaser. SOOO easy to put together.

Chicken Cordon Bleu II

My boyfriend said that it was not only the best thing I've ever made for him, but it even topped anything his mom makes! It almost made me cry. The only substitution I made was using provolone instead of swiss, and I made extra sauce, as other reviews have suggested. I served it with brown rice and mashed potatoes.
