Saw this somewhere & found it to be helpful. 1 star - Don't Make Again 2 stars - If everyone else likes it, I'll eat it. 3 stars - Make again, but adjust it. 4 stars - This was good just as it was. 5 stars - I'd eat everday. Save it and I might want it for my birthday meal. MORE

My favorite family cooking traditions
I have put together a cookbook for my family, in-laws & my work. The work one contained about 600 recipes in it. I love to try new recipes to find the "perfect" one. I've found many on this site.
My cooking triumphs
My families favorite is Chicken & Rice or Chicken Cordon Bleu (which was taken from this site). They also love the Chi-Chi's cornbread I make & I've found another cornbread recipe from this site that I LOVE!!
My cooking tragedies
I usually have to make Angel Food candy 2 or 3 times before it turns out and doesn't burn.

Chicken Quesadillas
Thanks for the recipe. I loved it. I used extra chicken & only 1 red & 1 green pepper & no bacon. I lightly oiled 4 tortillas, as others suggested so they'd get crispy, and put oil side down onto 2 cookie pans. Then I put the chicken mixture on top & covered with another tortilla. After cooking, I sliced like a pie into 4 pieces. I froze the leftovers & microwaved & they were just as delicious. This one is a keeper in my recipe book!

Chi Chi's Corn Cake
I LOVE this recipe!!! My husband requests this whenever I make mexican themed meals. I always double it & it still fits into 1 8" square pan. Since I couldn't find the masa harina corn flour, I substitute with cornmeal & it turns out just the same. When I bring this to potlucks, I transfer into my slow cooker & it's one of the first things gone. I haven't tried the creamed corn yet. My favorite frozen so far is Green Giant Extra Sweet Niblets Corn. One 1 lb. bag for a double batch. You gotta add this as a side to your Mexican meals!!! Yum!!!!!!!
