Butter Schnitzel
Delicious! I had a pork loin that I cut into abaout 6 slices and then pounded. I also thinned the mushroom butter sauce down by putting about 3 Tblsp of water into the pan I browned the pork in, loosened the drippings and tasty bits then added to the mushroom sauce. This was so good. Will definately be making this again but will make a bit more sauce next time.

Bacon-y Bok Choy
super easy and very good. I only had reg. bok choy on hand so I cooked the white part for about 5 minutes then added the leaves for about 3 more minutes with about 1 T. of water and it turned out great. I used turkey bacon as well for a "healthier" alternative.

Flatlander Chili
I was looking for a good, basic chili recipe to take to a chili potluck this evening. This one looked like the right one. I didn't realize it but the potluck was actually a chili cookoff. Guess who won first place? That's right, me. I also did not use tomato juce but did the tomato sauce and canned tomatoes instead. I added a can of beef broth and tomato paste in place of 1 can of tomato sauce. I used red bell pepper since I prefer that flavor when cooked and I usually add jalepenos but was out so I also added 1 can of hot "Rotel" to spice it up.
