I added 1 large garlic clove to the onion and sauted in a mixture of butter and olive oil with salt and pepper to taste. I then drained the spinach by wringing in paper towel until dry. The spinach was added to the onion/garlic and cooked for a couple more minutes. Instead of 1 cup of cottage cheese, I used about 3/4 cup and added mozzarella and parmesan cheese as well as a couple tsp. of sour cream (then mixed with spinach/onion & garlic). The chicken was sliced in to thin layers and seasoned with season salt. I then spooned the stuffing onto the chicen and rolled (like a jelly roll). Instead of cooking fully in the oven, I pan seared the chicken and browned on both sides. I then completed the cooking process in the oven (only took about 7 minutes) and then placed a little butter on top of the chicen.
