Creamy Chicken and Rice
Tasty, tasty! Used Durkee's fried onions instead of crackers. Cooked rice in chicken broth. Added cooked mixed vegetables. Chopped cooked chicken rather than shredded it. Mixed shredded colby jack and cheddar cheeses in with the cheese sauce. Only had about one cup of sour cream and it still worked out well. My son doesn't eat meat, so made a portion for him without meat in one tray. A guest doesn't eat onions, so put the crunchy onion topping only on part of it. Easy to adapt for nearly all picky eaters at the same table! Will definitely make again! Thanks!

Shredded Beef Enchiladas
Yum delish. The cheese sauce inside is fabulous. I cooked the meat in the Red Enchilada sauce from this site. Also dipped the tortillas in hot oil for 30 seconds, then in the enchilada sauce. When the tortillas fell apart, I abandoned the idea of beautiful rolled enchiladas and made chiliquilas instead. Hey, not a bad trade off! Perfect blend of spicy/cheese/creamy. This was FABULOUS! Better than any other enchilada recipe I've made or made up in the past 30 years. Did add about 1/2 cup of Velveeta to the sauce and quite a bit more cheese. Made a cheese only for my vegetarian son, strewing the layers with cheese. Great, great, great.

Apple Orchard Punch
Made it with a 3-year-old and a 7-year-old. They thought they were hot stuff being able to pour the liquids into the punch bowl. They loved everything about this punch and asked for it the next day. For me? Not the best punch I've ever had.. not by a long shot. Used this recipe exactly, then tried tweaking it in terms of the juice concentrations to cut the sweetness. My husband took a swig of the original recipe and said it was far too sweet. On Day Two, though, I mixed the juices and put in the fridge so that the kids can add their own soda. That helped a lot. After reading the rave reviews here, am wondering if the brand of ginger ale matters. I used a store brand which may have been sweeter than say, Canada Dry. I'll keep trying this for the sake of the kids. OK, revised this upward. Way upward. It is now the definite favorite in our house without any soda. The juices blend well together and we have a pitcher in the fridge 24/7. I did find that the best "fizz" is cranberry Sierra Mist which may only be out for the holidays. Also tried it last night with sparking apple juice and that was tasty as well.
