About this Cook
I am a mom, constantly busy with two young children. One of my favorite things to do is bake with them, they get a little crazy with the stirring, but somehow it always works out ok. Although I have won contests with my baking, it is my 2009 resolution to learn how to cook. I especially want to open my meat-eating husband up to vegetarian dishes.
My favorite things to cook
I love to bake anything that involves chocolate. I also like to try new things I haven't done before. I recently baked my first, second and third pies ever for a family gathering, everyone loved the braided crust.
My favorite family cooking traditions
Since my family is in Nebraska I am working hard to start special new traditions for my son. One of my husbands favorite is fresh apple cake on Christmas morning.
My cooking triumphs
Pies, with home made crust. I pride myself on doing everything on my own, no store-bought pot-luck offerings from this girl! The very best thing I've made though, was a chocolate cake for my sons birthday. 6 hours and 4 lbs of buttercream frosting later I had a masterpiece!
My cooking tragedies
Garlic bread. I never seem to get the right combination of spices and it always turns out kind of weird.

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies
Where has this recipe been all my life?! These cookies are a perfect combination of oatmeal, pb and chocolate (I used milk chocolate chips) definitely double the recipe, these will go fast!

Lemon Cake with Lemon Filling and Lemon Butter Frosting
Im glad I started making this recipe the day before I needed it. The cake was VERY heavy and had a weird corn bread kind of taste/texture. I did not use it and ran out for boxed mixes the next morning. The curd was very sour, but tasted like real lemon as opposed to a sugary lemonaid type taste. The frosting was awesome. I ended up doing 5 layers of cake (3 boxes of white cake mix) with two layers of curd and two layers of frosting in between. I doubled the curd and frosting recipes and had enough to do all of the layers and frost the whole thing - including a crumb coat. I had to drive the cake up the 405 freeway and the top 4 layers ended up sliding off the bottom curd layer, and then when I was serving the cake the top layer fell off the other curd layer - its slippery! Someone suggested using a few wooden dowels to hold it all in place. Will definitely make the curd/frosting again, skip the cake.

This is the perfect cookie texture I have been searching for! I made my cookies out of 2T of dough and did not flatten, they spread evenly and slid right off my worn, old pans(that never happens!)The taste was good, my husband was REALLY happy with them, I perfer the more complex flavors in the Mrs Fields recipe on this site though. I used the big Guittard chips, which didnt work so well with the size of these, next time Ill use regular sized chips. Oh just as I was about to submit this review, my husband looked up from his computer and said, "by the way, those cookies are what sugary dreams are made of. They're soooo good!" hahaha
