Pork Roast with Sauerkraut and Kielbasa

Excellent! I added some chopped onions and basil along with garlic and fresh ground peppercorns. The whole family enjoyed this.. (even ones who hate kraut).. with garlic potatoes and sweet potatoes.. which my kids love.. and cornbread on the side. This recipe will absolutely be made again! Thanks...

Beef Tamales

This recipe is actually very good. I used pork carnitas and menudo seasoning along with the other spices. I toasted my peppers with some liquid before adding everything together and seasoned my masa with more menudo seasoning for better flavor. The picture posted of these really looks nothing like what they should. Tamales should not be that thick and by all means should not have a red (blood like) sauce seeping from them. Great recipe!

A Plus Fair Corn Dogs

These were really a mess! Followed the recipe exactly as written but the batter just slid right off into the fry daddy grease. I tried drying the hot dogs.. rolling in flour.. leaving them moist.. not using flour.. using less batter.. using more batter.. lol After about 6 tries.. I salvaged the rest of the weiners by having the kiddos grill them over a campfire on sticks.. they had a blast! ;)

Tasty Toothpick Appetizers

This sounded so strange that I just HAD to try it. It was actually quite a treat. I made a few and had each of my kiddos try one.. altho I had to half the olive and cherry (none of them are big fans of these) they winced at first when putting everything in their mouths.. then said.. "it's really good".. lol Maybe not for everyone.. but sometimes the "strange sounding" recipes are the best ones! :)

Buffalo Style Chicken Pizza

We make this quite often around our house. I always cook the boneless chicken thighs or breast meat from raw in the butter/hot sauce adding garlic. It soaks up so much flavor this way. Then we bake our homemade pizza crust for about 10 minutes before adding the toppings. The kids love it with a ranch dressing/very little blue cheese mixture. I always make sure to have extra hot wing sauce to mix with the ranch dressing and for drizzling on top.

Baked Beans, Texas Ranger

Very good recipe. I had bacon on hand so I used that instead of sausage. I also softened the bell pepper and onion in a little of the bacon drippings before adding the rest. The family loved them!

South Texas Carne Guisada

This is "sorta" my recipe. It was changed quite a bit after it was submitted. Add some green bell pepper.. or if you're feeling lazy.. just add a can of Rotel (medium) to the meat as it's cooking along with the spices and extra onion.

Lumpia (Shanghai version)

These were good! The only thing I changed was.. I added raisins and sprinkled some cayenne pepper to the mixture. This gave it a very unique flavor that everyone loved! Next time I will cook the mixture first.. I like my spring/egg rolls stuffed with mixture.. that's hard to do when the meat is uncooked at the beginning.

It's simple.. but the flavor and texture is not what I was looking for. I fried them in hot oil.. but they were mushy at the end. Probably a corn meal, flour and potatoe flakes mixture would have made them crispy and more to our liking.

Sweet and Sour Pork III

Tried this for dinner tonight. Everyone liked it. I did use cut up boneless chicken thighs. I just stir fried them with minced fresh garlic, green onions and fresh ginger.. no batter or deep frying. Next time.. I'll make sure and have some sesame oil on hand. Think it would have tasted much better with it. I also used chicken broth in lieu of water and more soy sauce and much less sugar. Broccoli and carrots went very well with this too!

Chicken Enchiladas II

This is more of a burrito with a creamy cheese sauce... rather bland at that. Would be better if the chicken had some spice.. besides garlic powder and absolutely no packaged taco seasoning as other reviwers suggested. lol Perhaps sautee chicken with fresh garlic, comino and cilantro to start and corn tortillas.. slightly cooked in hot oil before rolling. I love to try new things.. but really had to almost completely change this recipe before serving!

Guinness® Corned Beef

Mine wasn't dry.. stringy.. or over-cooked at all. I added an extra can of Guinness and the full seasoning packet that came with my 3.5lb corned beef brisket. Popped everything in my handy crockpot and cooked this on high (yes.. I was rushing things a bit) :) for about 4 hours.. it fell apart.. full of flavor!! I served this on fresh toasted rye bread with aged swiss cheese and Boar's Head sour kraut.. (much less sodium)found in the small bags in the deli dept. Threw some kettle cooked potato chips on the side. Not only was it a gorgeous sandwich.. it only lasted a couple of hours with my hungry bunch!! Thanks for the recipe..

Tropical Lime Cake

Made this for a St. Patrick's Day BBQ.. Everyone Loved It!! I didn't have quite enough lime juice for the glaze.. so I added some orange juice.. I also added some lime gelatin to the glaze for a nice green color.

Angel Chicken Pasta

This was good. I also doubled the sauce and used chicken broth in lieu of wine.. cut the chicken breast in bite size pieces and added some steamed broccoli and carrots into the sauce as well. The family loved it with spinach noodles!

Margaritas with a Bite

When I'm looking for a change.. this is how I make my Margaritas! Try adding a tsp. of sugar and some fresh lime juice in the blender too. These are also good on the rocks.. 1/2 shot of both alcohols and Sauza Margarita Mix.. Awesome!

Chow Mein Noodle Cookie

These were very good! The only thing I changed was 1/2 chocolate chips and 1/2 peanut butter chips since that's what I had on hand. My hubby said it reminded him of his childhood. Thanks!
