Pumpkin Muffins II

YUMMY! Lots of pumpkin spice flavors. I used 1 15 oz can of pumpking & subbed applesauce for oil. Made 24 regular sized muffins. Thanks for this yummy (moist & flavorful) recipe!

Super Fajita Marinade

Reviewed: Sep. 29, 2009
AWESOME! Followed a couple others & added that dash of cinnamon & Tbl of balsamic vinegar and only used 2 limes. (I've made another marinade & it was too limey for us before). I also marinated about 24 hours & used sirloin cut into strips. This was a great marinade! I made my onions as I had with another recipe from this site, Texas Chicken Quesadillas, and put my bell peppers in another pan with some oil and a very small amount of packaged taco seasoning & then threw the peppers on the grill where the beef was cooking. These fajitas rocked and I will be making them again for sure! Thanks for this great marinade!

Garlic Lover's Chicken

Reviewed: Apr. 28, 2009
I really liked the flavor, but we didn't like that the coating was so moist as we prefer something alittle crispier. I added garlic salt and garlic powder to the bread crumbs & no plain salt. Also, I used a lot more bread crumbs. I could smell too much parmesan cheese so just kept adding those three things until I couldn't smell the parmesan cheese. I dipped in flour, then milk as another suggested before coating. I did use the whole amount of lemon juice, abt 3 Tbl butter & just over the amt of garlic the recipe calls for with just 2 chicken breasts. The house sure smelled good (and garlicy) while I was making! Just wish it'd been crispier...

Berry Cheesecake Parfaits

Reviewed: Apr. 15, 2009
These weren't as good as I thought they'd be. I'd been eyeing them for a couple of months in my Kraft foods magazine. I thought it would be sweeter. I made some up for Easter, others said they liked them but I was not a fan. Just not as sweet as I thought they'd be.

Enchilada Casserole III

Reviewed: Mar. 23, 2009
Really good! My husband and I both like this & he's not a casserole fan at all. He was not real happy after I'd just said we were having Enchilada's for dinner & he came in to find this. But, after he tried it he said it was good! Took the other half of the pan to my mother & her husband and they thought it was great too. Followed recipe & it was perfect. Thanks for posting, this one's a keeper!

Amazingly Easy Irish Soda Bread

Reviewed: Mar. 19, 2009
It was like a huge biscuit. I did mine in my kitchen aide as another suggested & it was very simple. Baked at 350 for 55 minutes & came out great! Took this to a neighborhood St Patty's day cook out/dinner & everyone said it was very good. Brought left over into work & all said they liked it there too.

Spring Strawberry Spinach Salad

Reviewed: Mar. 11, 2009
I usually do not like fruit in my salad, nor would I normally eat spinach as a salad. THIS IS SO GOOD my husband & I can't get enough of it! We had this at my sister's over the weekend & I made for dinner last night and had again for lunch today. It is really really good! I left out the paprika and added chopped walnuts...This one's a keeper! So different and so good!

My MIL & husband liked it better than I did. I'm not sure why I didn't like it that much. It wasn't bad, just not one of my favorites.

Old Fashioned Brown Gravy

Reviewed: Feb. 25, 2009
Did not work for me. I used beef broth as another suggested in place of the water. It was not brown in color, didn't thicken and did not taste right no matter how long I let cook or how much pepper I added trying to season. Will keep looking for other recipes to try.

Creamy Cream Cheese Frosting

Reviewed: Feb. 20, 2009
As others suggested, I used only 1 cup of powdered sugar & 8 oz of cream cheese with the 8 oz tub of cool whip. I thought this was strange at first & not sure how good it would be on my banana cake. I really like cream cheese & this didn't have a strong cream cheese flavor like I'm used too, but it was AWESOME! It got rave reviews from coworkers & we all decided this frosting with the cool whip really woked well for my banana cake! We thought you wouldn't want to eat the banana cake with carrot cake frosting! (We all associate carrot cake with really cream cheesy frosting). I LOVE cream cheese frosting & this really is good! Mine was not very pretty & I think I could have put it in my kitchen aide with the whisk attachment to get a prettier finished product for my cake, but tasted good! Will use this one again for sure!

French Onion Soup Gratinee

Reviewed: Jan. 21, 2009
SO good! Have wanted to make french onion soup for about 15-16 years now & have always been afraid to try! I'm not sure what I was so afraid of...Used dried thyme as I didn't have any fresh, didn't use parsely but did stick in the half a bay leaf. Not a big Swiss fan, but it was great! Used Mozzarella over the Asiago. Hubby didn't like the bread in bowl, but I'm used to this with my FO soup soggy bread is OK with me on this dish. This receipe is a keeper for sure!

Nothing exceptional and I will not make this one again. I used black beans instead of kidney. Also, used the mexican tomatoes as another suggested to try & give it some umph. Nothing to write home about though from our house.

REALLY good! Served with a homemade Alfredo sauce & pasta. I don't have a cast iron skillet, so just put in my regular pan before it went into the oven. Was in there for more like 30 minutes in order to get cooked. Very good & will be making again for sure!
