I LOVE FOOD & I love to cook! I am a married mother of one three year odl son who works full time outside the home. I love to try new recipes! My husband is not so big on this and wishes I wasn't always throwing new ones into the mix every week. My Mom once told me that when she would try new recipes my Dad would say "you have to try new recipes to know you liked the old ones best." This has become my husband's way of telling me when he's not so fond of a new dish. I'm a better cook than baker according to my husband, I think he is right on with that statement from time to time... I'm a busy body always getting things done around the house & sometimes forget I have something in the oven if I don't set a timer!
My favorite things to cook
Mexican, pasta dishes, chicken...Basically anything that sounds good to me & doesn't sound TOO drawn out/long/complicated. I seem to make more chicken dishes than anything & I'm not sure why that is & I love seasonings! I have really become one to use seasonings where as I didn't so much when I started cooking so many years ago!
My favorite family cooking traditions
I grew up with a Grandmother & Great Aunt that were great cooks! My mother cooked more in my younger days, but as we got older she was working full time & not home as much. My Dad loved to cook too, but I was never a big fan of my Dad's cooking. It wasn't until he was gone that I finally decided to try chili! I was a VERY picky eater growing up. I've always loved the kitchen & being that my Dad managed grocery stores when I was a kid, I love grocery shopping!
My cooking triumphs
I made my very first Thanksgiving dinner when I was 21 for my boyfriend & his family. Also, I did it all by myself in the kitchen of our one bedroom apartment!
My cooking tragedies
Husband's birthday cake when I was 9 months pregnant! I had the oven set like 100 degrees too hot & so the cake was a total disaster! Also the runza's that I made & absolutely hated! They took me all day & we had all left over b/c I didn't like them! I can't tell you how many loaves of bread I had from this mess too, it was pretty bad. I will never live either of those two down! Gotta be able to laugh at yourself though & don't take it too seriously!

Garlic Lover's Chicken
I really liked the flavor, but we didn't like that the coating was so moist as we prefer something alittle crispier. I added garlic salt and garlic powder to the bread crumbs & no plain salt. Also, I used a lot more bread crumbs. I could smell too much parmesan cheese so just kept adding those three things until I couldn't smell the parmesan cheese. I dipped in flour, then milk as another suggested before coating. I did use the whole amount of lemon juice, abt 3 Tbl butter & just over the amt of garlic the recipe calls for with just 2 chicken breasts. The house sure smelled good (and garlicy) while I was making! Just wish it'd been crispier...

Berry Cheesecake Parfaits
These weren't as good as I thought they'd be. I'd been eyeing them for a couple of months in my Kraft foods magazine. I thought it would be sweeter. I made some up for Easter, others said they liked them but I was not a fan. Just not as sweet as I thought they'd be.

Enchilada Casserole III
Really good! My husband and I both like this & he's not a casserole fan at all. He was not real happy after I'd just said we were having Enchilada's for dinner & he came in to find this. But, after he tried it he said it was good! Took the other half of the pan to my mother & her husband and they thought it was great too. Followed recipe & it was perfect. Thanks for posting, this one's a keeper!
