Black Bean and Artichoke Burritos

I left out the onion (hubbie hates it) and the cheese to make it vegan. I pureed the beans and boiled them down to make it a bit pasty. Excellent!

Cinnamon Apple Pancakes

A good recipe. I wish the pancakes alone had been a bit sweeter so I wouldn't have to put anything on them. Next time I would add maybe a quarter cup of real maple syrup to the recipe.

Hazelnut-Mushroom Pilaf

A good quick dish. A bit too greasy - next time I will cut the butter in half. I added some veggie chicken strips at the end and it made a great meal!

Make Ahead Lunch Wraps

A tiny bit bland, but a good idea if you have a houseful of picky eaters. Top with your favorite salsa, and you have lunches to go for a long time!

Fabulous! Even one of my picky veggie 7 year olds liked it! Not enough to eat much, but even a thumbs up is worth gold! My vegan leaning husband also loved it! We don't like feta cheese, so I substituted with mozzarella and it worked great!

Super Duper Oatmeal

My kids hated this - they took one bite and refused to eat more. I thought it was ok, but really blah. Too mushy and not much taste.

Honey Carrot Cake

This was great! My husband is a health and fitness nut and didn't want a birthday cake that had any refined sugar. He loved this, and so did my kids, who have no problem gobbling down refined sugar! Glad to have found a cake to please everyone!

Pasta e Fagioli II

I made this recipe for my Italian father -- he loved it and has already shared the recipe with friends. For storing leftovers, be sure to store the soup and pasta in separate bowls or the pasta will absorb most of the broth.

Pumpkin Spice Muffins

I would use less nutmeg next time. My husband and I thought they were pretty good, but our kids devoured them - especially when I topped them with peanutbutter. We avoid sugar so we substituted 2T applejuice concentrate for the sugar.
