Black Bean and Artichoke Burritos
I left out the onion (hubbie hates it) and the cheese to make it vegan. I pureed the beans and boiled them down to make it a bit pasty. Excellent!

Cinnamon Apple Pancakes
A good recipe. I wish the pancakes alone had been a bit sweeter so I wouldn't have to put anything on them. Next time I would add maybe a quarter cup of real maple syrup to the recipe.

Hazelnut-Mushroom Pilaf
A good quick dish. A bit too greasy - next time I will cut the butter in half. I added some veggie chicken strips at the end and it made a great meal!
