I have so much fun cooking and baking all kinds of things! I like old favorites and new items that my family loves.
My favorite family cooking traditions
My family tradition is to have Mexican Food for our Christmas celebration. We have alwasy had homemade tacos and we add in some turkey enchiladas or tamales as well. For me, it's not Christmas without mexican food. Yum!
My cooking tragedies
The saddest cooking tragedies for me are when you bake something great and have trouble getting it out of the pan, or it crumbles and doesn't look as pretty as the effort you put into it. It still tastes great, though.

Chicken Enchilada Soup III
This is really good! I didn't have any Masa Harina, so I used 6 corn tortillas cut up and they worked well. But, don't even try it without Cumin. I was out, so I had my husband pick up some on the way home. I made the soup and tasted it. Without the Cumin, it was flat. There was a major piece missing. I added double the amount of Cumin called for and it was delicious! Oh, I also added a little Cayenne Pepper to spice it up a bit. My husband loved it too, and he's picky about soups.

Easy Ice Cream Sandwiches
This was so yummy! I made it one large sandwich using 8" cake rounds also. I used chocolate chip ice cream and then edged it with extra chocolate & butterscotch chips. The only thing that was hard was cuting it into pieces for serving. When the cookie was thawed enough to cut, the ice cream was very mushy. So I put it back in the freezer after cutting for a while. Maybe it could be pre-cut before the long freeze time. It was delicious and got rave reviews at the summer BBQ party!

Waffles I
These are great! I even substitued 1/2 C Flour with Soy Flour and they turned out perfect! Light & fluffy on the inside and lightly crispy on the outside! Yum!
