Thai Ginger Chicken (Gai Pad King)

This is a fabulous recipe with a nice balance of flavor. The only change I made was to use the chicken marinade from this site's RamJam chicken recipe to marinate the chicken for 2 hours first. YUM!

White Chocolate Party Mix

This is always a crowd pleaser. Try Cheerios snack mix for a different flavor than traditional chex. I've also melted a package of Andex milk chocolate mint baking chips to the white chocolate for a great flavor.

Cottage Cheese Chicken Enchiladas

Wonderful recipe. The cottage cheese/sour cream really makes it interesting and tasty! I added a can of corn and a can of black beans (both drained and rinsed) to the chicken mixture. I poured just enough enchilada sauce to coat the bottom of the glass dish and then laid 6 corn tortillas open, the chicken mixture, 3/4 cup enchilada sauce, shredded cheese to cover and then repeated the layer. Everyone loves this meal!

Almond Lemon Chicken

Incredible flavor! Skipped the corn starch and butter because it's unnecessary. Also used half of the oil and didn't miss it. Doubled the marmalade. One word of caution: when adding the chicken to the skillet at the end, be sure to turn the temp down to medium or medium low and cover to avoid burning and to let the flavor simmer into the meat. YUM!

White Chocolate Snack Mix

I followed the recipe as is except for 1 addition: Mix and melt 2 bags of white chocolate chips with Andes peppermint (or creme de menthe) baking chips. It will change the color, but it adds a nice flavor! YUM! Disappears quickly during football games!

Cheddar Mashed Potatoes

Yum! I followed this recipe until the "mash" part. I placed all ingredients in an electric mixer and blended until the desired consistency was reached. I did add a small amount of milk to make it creamier. Not a morsel was left!

The RIGHT way to make this is with 2 parts vodka; 1 part Cointreau, Grand Marnier or Triple Sec; juice of half of a lime; and a splash (or more) of cranberry juice!!

Orange Dream Punch

If you like orange dreamsicles, you'll LOVE this! I made it for the kids at our New Year's Eve party and the adults loved it just as much (if not more!). Of the half gallon, I used a 2/3 orange sherbet and 1/3 vanilla ice cream. It was beautiful and frothy.

Asparagus Roll-Ups

Next time I make these, I'll use the thinnest asparagus spears I can find to make eating them easier. Also, I used sourdough and buttermilk breads. The sourdough rolled out better but didn't bake as well. Other reviewers were right that the bacon really makes this appetizer come together, so I doubled the bacon. Excellent advice!

Party Pinwheels

Great advice cutting down on the ranch dressing mix; 2T was plenty and even a bit too salty. I used Fiesta Ranch Dip for a little extra zip. Added orange bell pepper with celery to make interesting crunch. These were gobbled up quickly!

Hot Artichoke and Spinach Dip II

This was the best spinach/artichoke dip! Instead of plain artichoke hearts, I used a commercial artichoke tapenade, which also had chopped capers and green olives. Also used all 10 oz of spinach. YUM!

Jalapeno Poppers I

These were a huge hit! I must have had larger jalapenos than other reviewers because the inside filling was just enough. Dipping in flour first greatly helped the Italian bread crumbs stick. Might try cereal instead next time for some crunch. Definitely wear gloves as others have suggested!

Seven Layer Taco Dip

Such an easy, tasty recipe! All of my guests loved it and asked for the recipe. The key is seasoning the refried beans! I intentionally left out the lettuce.
