Pancakes
I had to make my own self-rising flour according to the recipe I found online. With that said, the pancakes turned out just OK. They were fairly dry, even with syrup. Their saving grace was that I added blueberries, which added moisture. I don't think I will make this recipe again, but I learned how to make self-rising flour in case I ever need to again.

White Bean Chicken Chili
My hubby's fav recipe as of first bite. Substitutions were 2-10 oz. cans Ro-Tel Lime & Cilantro diced tomatoes for regular diced tomatoes, 4 fresh tomatillos for canned tomatillos, canned turkey for canned chicken, large shallot for chopped onion, large jalepeno (removed seeds and ribs) for canned chilis. (That is what I had on hand comparable to ingredients listed). This chili has a KICK! My 2 year old had 4ths. 8y/o son added sour cream to bring down the heat in his. The spices were perfect! I will search for no other "Chicken Chili" recipe. Of course, it may not turn out the same twice in a row...that's the beauty of it!

Spicy Black Bean Empanadas
Amazing! All three kids and hubby devoured them. My 2 year old was eating the filling out of the bowl with a spoon almost faster than I could make the empanada. Followed the recipe as written and it was perfect!
