Broiled Tilapia Parmesan
The first time I made this for my family it was gone in minutes - everyone loved it! I followed the recipe exactly. The next time I made it I wanted to mix it up a bit, so before adding the butter-cheese-herb mixture on top of the fish I mixed in a handful of small scallops (since they are my hubby's favorite seafood) before spreading it on the fish - I didn't change the cooking times at all, and with just the 2-3 minutes under the broiler the last time it cooked the scallops perfectly, now they are a must everytime I make this! (You could probably do it with baby shrimp as well...)

I have a recipe almost exactly like this. When making it I just put it all in the blender!

Ali's Amazing Bruschetta
I perfer to omit the onion and oil and use some lemon and a splash of balsamic vinegar instead...
