Working mom to two boys, I'm always looking for quick healthy meals. I don't care what foods I cook so long as it tastes good. :-) My first whole baked chicken came out phenomenal! I just wish I could remember what I did that worked so well... I actually hosted an Iron Chef match in my kitchen with two teams of friends and it took 2 days to clean up afterwords. The food was great but the mess was overwhelming.
