I was not in love with this recipe, and my husband didn't take the leftovers for lunch, which is a HUGE thumbs down. I doubled the sauce and, at the end, added straw mushrooms, green beans, and water chestnuts for texture. It was ok, but certainly no better than popping open a bottle of teriaki glaze, which would have been quicker. There was something kind of weird about the ketchup/lemon combo. I will be sticking with the bottle of glaze in the future.

I followed the review that used 1 c. applesauce and 1/4 c. oil. Seemed thick, so I added about 1/4 c. milk. After I baked them and we had fallen in love, I realized that I forgot to add sugar!!! As in, I added NO SUGAR!!! I guess the applesauce and choc. chips were sweet enough. The best muffins I've had in ages.

A name change seems in order. First, when my family says, "What's for dinner?" I don't really want to say "Chicken Carcass Stew." Second, doesn't carcass imply using the bones (i.e., as when you make broth)?
