Balsamic Green Bean Salad
No excuses not to get your veggies. This is so easy and it is VERY good. I had to substitute red onion for shallots. Didn't want to run to the store.

Penne Pasta with Spinach and Bacon
This little gem of a recipe is pretty darn good. I used 8 slices of bacon and baby spinach out of a bag. It is super easy and fast. You can't beat dishes like this when you consider the alternative....drive through!! Yuck!

Oatmeal Peanut Butter Cookies
OMG...top notch..yummy good! Great texture, rich flavor, and very fattening. I did add vanilla and about 1/2 cup more oats mixed with wheatgerm (I throw that in everything). I have a feeling I could have added another 1/2 cup oats if I had wanted to. I will make these cookies again very soon and try some white chocolate chips.
