Thanksgiving Leftover Casserole

I appreciate this idea on how to use leftovers but we found this to be just okay. The recipe does not make much (which is good) and can be prepared in a two quart casserole dish. We didn’t like the stuffing on top and ended up scraping it off. My son got the good idea to add bacon bits to his and that actually made it palatable. I doubt if I will be making again but if I do I will certainly use bacon bits on top instead of the stuffing.

Luscious Lemon Cake

This cake is pure lemony goodness. I don’t usually like box cakes but this has a homemade taste. I used ¼ lemon juice with the water. I thought it would be nice to pour the glaze on the top but that would have just made a sticky mess. I was skeptical about pouring the glaze on the bottom but it worked perfectly and seeped through the entire cake without making the cake soggy. My entire family loved this and have already requested that we make it again soon.

Pasta with Hot Sausage Sauce

Italian One Step Casserole

We enjoyed this. I browned the sausage first but otherwise followed the recipe. I used a good quality, spicy Italian sausage which added to the success of the recipe.

Sarah's Applesauce

This applesauce is so easy and delicious. I needed to use up some apples that a friend gave me. I used granny smith and found ¼ cup sugar to be just right. We ate it warm as a side dish with dinner and of course it tasted even better the next day when it was chilled. I will be making this regularly from now on.

Authentic, No Shortcuts, Louisiana Red Beans and Rice

My husband always cringes when I pull out my crock-pot because for some reason most things I cook in it taste a little off. Not so with this dish, it was superb! I soaked my bean overnight and I followed the suggestion of other reviewers and used less water. I added a bay leaf and I also followed Ernid’s suggestion of ham bouillon in lieu of the ham hock. My kids loved it too. Thanks Melissa for a great recipe.

Slow Cooker Beef Roast

This was okay and I had all of the ingredients on hand. I’m not certain that the bbq sauce was necessary. It didn’t seem to add to the taste. Overall the meat was flavorful and tender.

Hamburger Steak with Onions and Gravy

My entire family enjoyed this dish. The meat was flavorful and tender and the gravy was also good. I usually make 4 patties out of a pound of meat but I found the 8 smaller patties to cook quicker, they were more tender and it was easier for us to control our portions.

Farmer's Market Vegetarian Quesadillas

This is absolutely delicious. I admit I made the poor man’s version with green pepper instead of red, yellow onion instead of red and I omitted the squash. I prefer this to chicken quesadillas and will be making these regularly.
