Penne Pasta with Veggies

Good basic recipe, baked at 350o 30 minutes but found this to be a rather dry dish, would suggest adding 1/2 c chicken broth before baking. I decreased butter to 2 tablespoons.

Sodium alert: Onion soup mix, 590MG, Worcestershire, 65MG, Lower Sodium Soy Sauce 575MG. No extra salt needed! May need to adapt this recipe to suit your diet.

Slow Cooker Spinach Marinara Sauce

Recipe states 2 1/2 Tablespoons crushed red pepper. I added ONLY 2 Tablespoons and this turned out so hot (spicy) that it burned our tongues. This is CLEARLY a mistake!!!!!Probably should have read 2 1/2 Teaspoons crush red pepper. Proceed with CAUTION!!!!!!!

Blackened Chicken

Was not impressed with this recipe. It is quick to fix but the heating of the skillet and oil made a lot of unpleasant aroma in the house, the chicken was moist but not memorable.

Pretty Chicken Marinade

I used low sodium soy sauce but the chicken was much too salty for our taste. I used frozen boneless skinless chicken breast that may have been infused with salt which caused the problem. Will use only fresh breasts next time.

Chicken Breasts with Balsamic Vinegar and Garlic

I suggest using 1/4c balsalmic vinegar, then add up to 1/2c if needed. Apparently some brands have more "punch" than others. We did enjoy the dish.

We enjoyed this dish, however, I will add extra spice the next time or purchase and Enchilada sauce with additional spice. If you are serving this recipe to children you may want to stay with mild Enchilada sauce.

Amusement Park Cornbread

This is an interesting recipe, more cake-like in texture than we expect in cornbread. I would not care to serve with chili, etc., however, it might be an interesting addition to a bruch buffet.
