Sweet Potato Souffle III
Everyone's favorite dish at thanksgiving, hands down. I also made a double batch to serve at a soup kitchen on christmas-- huge hit.

Orange Corn Muffins
I made mini muffins with cornbread mix and a generous amount of orange extract. They tasted just like the Howard Johnsons Orange Toastees!

Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce
Oddly enough, these were really good. Didn't make the sauce or have the cumin. I was unsure about the cheese, so I only put it in half the batter. Silly me, everything is better with cheese in it!
