I am a stay at home mom of four beautiful children. My husband is Mexican so I really only cook Traditional Mexican dishes. It took me a while to learn some, but now I have perfected alot of them and have made them in to easy recipes. We really love Tamales, Posole and Pollo con Mole. Tamales are done only for Christmas, Posole gets done just about all the time, and mole is tradianolly done for birthday parties, weddings, anniverseries and deaths. Turning long slow cooking tradional Mexican recipes into quick and esay dishes too make. I tried to make the Conchas recipes here on allrecipes.com and they came out way to hard and burnt because the recipes tempeture was way to high it should of been at 350. But oh well they are cheaper to buy at the bakery anyway!!!
