Banana Muffins II

This was very easy and very good! I followed the recipe with these changes: 1 tsp vanilla extract, 1/2 tsp cinnamon, 1/2 cup of applesauce instead of ANY butter. They only needed 25 minutes in a pre-heated oven.

Crispy Oven-Fried Fish Fillets

I toasted panko crumbs first and mixed in thyme, basil and oregano. I also skipped the first milk dunking and did flour and garlic salt first, then milk, then panko crumbs. I don't know if it was because I used scrod that might have been too thick or if it needed more seasoning, but this was a bit boring. Also, the 10 minutes were too short.

Savory Mushroom-Barley Soup

This was a very good soup and easy to make. I sauteed the onions and celery until they browned (adding another flavor component). Then I added sliced button mushrooms and baby portabellas. I sauteed those until all the liquid was gone. Then I added the carrots, beef broth and some marinara sauce since I didn't have any tomato paste. I let that cook together for awhile. I gave it a little puree with the hand blender. This thickened it up some so I had to add more broth. Then I made the barley and added it to the soup.

Butternut Squash Casserole

With a few tweaks, this was great! I split the butternut squash in two, scooped out the seeds, rubbed 1 tablespoon of butter on the insides and placed it cut side down on a cookie sheet. I baked it at 400 degrees for about 30 minutes until it easily pierced with a knife. Then I scooped out the orange flesh (toss the skin) and mashed it with 1 1/2 cups of skim milk. I mixed it together with only 3 tablespoons of butter and all the other ingredients ( I added the beaten eggs last so they wouldn't cook in the mixing bowl.) I skipped the topping (it was yummy enough already).

Whole Wheat Snickerdoodles I

I wanted to use up my whole wheat flour. I think I just don't love snickerdoodles. I thought the cookies were very bland with a strong wheat flavor. Next time I would add some chocolate.

Maple Dill Carrots

These were very good. I cooked the carrots in the butter and sugar for a long time so they liquid would get syrupy. The dill adds a nice zing.

Raspberry Cream Cheese Bars

It is very hard to spread the preserves. Next time I would try piping it through a bag (as already suggested). The cooking time was too low, I ended up putting it in much longer (and then making a HORRIBLE mistake of putting it under the broiler to brown and forgetting about it so it burnt :( It didn't look so good, but it still tasted good. Further know in my house as the "burnt dessert".

Potato Chip Chicken Casserole

Started out with this recipe but then totally changed it. I used chopped cooked chicken, 1 can low sodium/low fat cream of broccoli soup and cream of celery soup. 2/3 cup of fat free miracle whip, 1 cup plain yogurt, 1 tbs lemon juice, shake of mustard powder and garlic powder. 2 cups of cooked noodles instead of rice and ritz crackers instead of chips. Used the cheese on top. Is it even the same recipe anymore? Everyone really like it but me. So, I guess I'll have to make it again...

Best Chicken Ever

This was great! I made a few changes. I added Italian dressing seasoning to the sour cream earlier in the day (so the flavors could blend together). I also used frosted flakes b/c that is what I had in the house. Everyone liked this. I think next time I will try golden onion soup mix with the sour cream and add some spices to the cereal for more flavor.

I followed the recipe and only added parm cheese at the very end. It was very bland. It needs more seasoning. The fruit is nice and the chicken broth helps, but it needs something more.

Batman's Best Caesar Dressing

This was great! I did tweak it. Skipped the anchovy. Put everything in the blender then slowly added EVOO. I didn't need as much oil this way. Tossed in some extra sour cream and cheese to make it more creamy. I was amazed that I had everything in the panty. I won't buy Caeser dressing again!

Slow Cooker Fifteen Bean Soup

I skipped the ham hock, cabbage and chili powder and most of the spices. Instead I added mild Italian sausage that I browned first. That added plenty of seasoning. My whole family liked this the first day, but no one wanted to eat the leftovers. I liked it, but won't make it again for awhile.

Apple Loaf

This was very easy and very good. I doubled the recipe, so I used 4 apples and a cup of applesauce with cinnamon instead of butter or adding extra cinnamon. I also let it bake 60 minutes and cool completely. It made two beautiful and delicious loaves.

Eggless Tofu Spinach Quiche

Spinach Balls

I thought they were a little dry and needed a sauce. We ended up dipping them in tahini, then they tasted like spinach falafel. Probably would have been better as an appetizer at a party than as a side dish for dinner.

Artichoke and Sun-dried Tomato Chicken
