About this Cook
I am a Geologist IRL and spend a lot of time outside. I love to cook and to eat. I am a SCA member and have a pretty big backyard veggi garden. I read a lot of books and have a cat. My husband and I love cooking together. He is the Grill Master, but he bows to my superior mac & cheese. LOL
My favorite things to cook
I like making all kinds of things. I am lucky to have many family members both male and female who cook like champions.
My favorite family cooking traditions
I watched Mom when I was a baby and was helping by age 6. Oddly enough, even being a wild child elswhere, Mom says that I was calm and collected in the kitchen. Even as a little kid, I never got in her way. We still team cook and it is a well oiled machine when we are together in the kitchen.
My cooking triumphs
I finally perfected my Mothers Jambalya which has no measurments. Her directions were the classic "some of this and some of that.
My cooking tragedies
Once apon a time, I attempted to make fish in a cast-iron skillet with a lemon glaze. I got iron fish and a deseasoned pan as a result. Had to throw it all away and reseason my pan. I was depressed for days after that. *sigh*

Rempel Family Meatloaf
This was totally awesome. My husband and I loved it. It’s worth six stars. Changes: Used dehydrated onion flakes instead of onion soup mix. That reduces the salt and I didn’t have it. ;) Added 3 Tbsp of steak sauce instead of two, and used an 8 x 12 pan so we can remove it from the dish. Oh yeah, its meatloaf so we use our hands to mix it up. I definitely recommend using a 93/7 ground beef over an 80/20 as the cheese can produce a lot of oil and the very lean meat produces (shock) less grease. Super yummy. It is going in the file!

Broiled Tilapia Parmesan
This was great! I made some replacements in the recipe because I didn't have some of the ingrediants. Added garlic salt and omitted celery salt. Used 1 TBSP Malt viniger and omitted lemon juice. The acids can change as long as one keeps in mind the strength and retains the correct ratios. WAY GOOD! YUMM!.
