Eggplant Tomato Bake

Reviewed: Sep. 10, 2009
This was an awesome dish! Of course I changed it up a bit (as I always do)...I had zucchini and so I used both it and the eggplant. I browned up some boneless, skinless chicken and laid in on top of the veggie layers before putting on the last of the sauce and cheese. Unfortuneatly, I didn't have the ricotta (I bet it would be even better with it...I did have shredded parmesan so thats what I used. I served it over regular garlic buttered spaghetti noodles. YUM YUM!!

This was a different recipe from the others I have tried and it is now one of our favorites. It was very moist and had a great texture. I followed the recipe exactly(for once!)and we all loved it. Very tasty the next day also=) Thanks Diana

Halibut with Cream Sauce

Reviewed: Jul. 20, 2009
This was AMAZING!! The onions and butter under the filet's kept the fish from burning onto the foil while grilling and left them moist! The cream sauce was luxurious and I used crushed garlic croutons and shredded parmesan on top! I can't wait to try this with white bass or perch! GRADE A+ Thanks Ginny!=)

The Best Meatballs

Reviewed: Jul. 13, 2009
Loved this recipe! The meatballs had the right texture and they were a great addition to my homemade spaghetti sauce. I made them into teaspoon sized balls and they browned up without falling apart. This ones a keeper=)

Butternut Squash Supreme

Reviewed: Apr. 11, 2009
This was an awesome dish! I didn't have much cheddar so I added some cream cheese too...wow what a great idea that was!!! Very creamy and tasty. I prefer corn flakes as a topping and they topped this dish perfectly. Can't wait to eat it again!

Consomme Pork Chops

Reviewed: Apr. 11, 2009
These chops were very moist and tasty. I had long grain and wild rice (Rice-a-Roni) and I used beef broth instead of water...per the box instructions. My husband is not a rice eater but her really like the way the flavor was absorbed into the rice. A keeper for sure.

Green Bean Casserole IV

Reviewed: Apr. 8, 2009
I was looking for something different to do with an abundance of home canned green beans...this recipe did the job!! I used 1 qt. and 1 pint of beans (drained) and followed the recipe except for the topping. I am not a big fan of boxed stuffing so I used the cheddar style french onions on top. Everyone loved them and the flavor was so much better with the homemade sauce...than the more traditional soup method. This one's a keeper!

Honey Mustard Grilled Chicken

Reviewed: Feb. 16, 2009
This is THE BEST honey mustard! Like others, I used worchestershire in place of the steak sauce..and actually, after trying it both ways, prefer the worchestershire. I have used it on chicken, pork, turkey sandwiches...awesome! Thanks for this great recipe!

Garlic Parmesan Chicken

Very moist and tasty. I used boneless chicken tenders and added just a dash of garlic powder to the butter mixture. I did as suggested and cut the breading mixture in half...which was the perfect amount. The whole family approved!

Fresh Cucumber Salad

Reviewed: Aug. 4, 2008
AWESOME!! I am not a big cucumber eater..but this recipe won me over. I was looking for something to make for my husband and ended up liking it myself. Very refreshing and just the right amount of sweet/sour. Of course, I added onion slices and a pinch of garlic powder. I put it into a mason jar and it looked so pretty...I made more and gave a jar to my dad and a few friends. Yep, we had a lot of cukes from the garden=)

Pan-Seared Chicken Breasts with Shallots

First know that I rarely follow a recipe exactly..I didn't pound the breasts thin. I like a more plump and juicey breast. I also added fresh mushrooms and thickened the wine sauce a bit after the breasts were done. VERY TASTEY!! We loved it! Thanks Amy.

Sirloin Tips and Mushrooms

Reviewed: Feb. 22, 2005
Another success!! My husband LOVED this recipe. I used fresh mushrooms and a 15 oz. can of tomato sauce since the mushrooms had no liquid. As always, I also added onion while browning the tips. Served over wide egg noodles with "Italian Herb Bread 1" (found on ALLRECIPES) and fresh broccoli. Yum!! Yum!!

This was an easy recipe!!! The best bread I've ever baked:) I let the bread machine do the mixing, kneading, and the first rise, then I shaped the loaves. Very light and tastey, and the house smelled wonderful! Thank-you Ann....finally a success!!!

Spicy Beef Curry Stew for the Slow Cooker

Reviewed: Feb. 10, 2005
This was very good but mine was over cooked just a little. Maybe my new slow cooker is extra hot, but it was ready in 4 hours on low. By the time we ate it the meat had fallen all to shreds. Very tasty though. Will start it later next time.
