About this Cook
I'm not really into real fancy sit-down dinners and such, I prefer casual buffet style meals. Besides, I don't have the nice dishes and things to put out. If we can use paper plates, then all the better. It's much more fun for me to enjoy everyone's company if I'm not worrying about setting the "proper" table with matching stemware and dishes.
My favorite things to cook
Mexican food, meatloaf, spaghetti, anything that is easy and doesn't take alot of time and is not too involved.
My cooking triumphs
anything still edible after I'm finished making it.
My cooking tragedies
anything involving dough. I touch it, and it's rock hard, hockey pucks

Cowboy Hash
Very quick, easy, and filling. I served this over brown rice. My whole family loves this dish.

Gourmet Sweet Potato Classic
I don't know what it is about this recipe...It's sooo good. My husband and I, like a lot of other people here, never really cared for sweet potatoes. I made this for Thanksgiving a couple of times over the last couple of years and everyone just loves it. After this past Thanksgiving, I have 3 more sweet potatoe converts. Everyone asks for the recipe! It's awesome, and so easy. Thanks!

Perfect Pressure Cooker Pot Roast
I absolutely love pot roast and have tried for years to make mine come out decent. They have always turned out tasteless and dry. I ran across this recipe one day and decided to try it. It was amazing! I couldn't believe how good it was. This is the one I will use from now on. And using the pressure cooker? What a time saver. No more waiting for hours for it to cook. Thank you so much.
