My favorite things to cook
I enjoy braising and will eventually post the most excellent recipe for short ribs which I love to make. I like to BBQ year round and in winter traditional comfort food is a must. The last number of years I've been cooking more fish and chicken as I have reduced my intake of red meat. Can't do without lamb on occasion though.
My cooking triumphs
Most recently, Christmas 2008, brined pork roast which was very moist and flavorful.
My cooking tragedies
My first attempt at chili, age 16. My mom cautioned me to "quit adding spice and to let it simmer". True to teenage form I ignored this advice. The result, she was all out of cayenne pepper and the chili was too hot to eat. Early 20's second attempt at Yorkshire pudding from scratch. Having made it successfully one time, the second attempt was for company. Had I been attempting Yorkshire pancake I might have listed this creation as a "Cooking triumph". Just being honest... sigh! I have used a packaged mix ever since and haven't encountered any problems, although it seems to me I'm probably cheating.

Sloppy Joes I
Thanks Nancy. This is the sloppy joe recipe of choice for me. I have made this for some time now, after having read reviews when I saw it here. As I often was served chicken gumbo soup as a youth, and love it, I decided to give this a try and have not regretted it. Simple, comfort food, and not tomato based, which is to my liking. I disagree with a reviewers comment, this is not blah! I have added to this here and there since, but that should not detract from the original. :)

Debdoozie's Blue Ribbon Chili
Yesterday was having company for dinner and cards, looked for an easy chili recipe and chose this one having read the reviews. Scaled it up a bit as I wanted to be left with some for today, I think there's some kind of football event on this afternoon. lol As had been noted by others easy to substitute a bit based on what's on hand, but I tried to stay close or I'm not actually making this recipe am I and then why offer a review or comments? Anyway, I used a 14 0z. can each of light red kidney , pinto and chili beans, ( a mix). Used Scarpone's Strained Tomatoes in place of the tomato sauce, also used Herdez mild salsa and added a small can of diced mild green chili's and one of salsa verde. If this was just for me I would have used a spicier salsa, but laid off doing so, not knowing my guests tolerance for heat. Therefore, offered assorted hot sauces on the table. Served over rice, and the ladies brought a nice salad, assorted buns and squares and sorbet for dessert. The ladies all loved this and said so, and then proceeded to kick my butt at cards. Thanks for the recipe.

Cajun Chicken
This gets raves every time I make it. I adjust quantities some times or put in another seasoning, instead of cajun. I like to mix the marinade and put all in a freezer bag in the fridge, for less mess. Also I freeze boneless, skinless chicken thighs in this in freezer bags. I always use thighs. Very good recipe, thanks
