Cake Balls

Reviewed: Sep. 21, 2010
I made these for an office birthday party and they were defenitely a hit. They are FANTASTIC!! I used devils food cake mixed with chocolate icing dipped in chocolate almond bark. They were a bit time consuming but shockingly easy. I made my cake in the morning, let it cool about 45 minutes and mixed in the icing. I then made my balls and stuck them in the freezer for about 6 hours. I used the entire pack of almond bark for dipping and about halway through I added pecan bits so half of my cake balls were plain and the other half chocolate pecan. Again, the dipping was suprisingly easy. I kept my pan of cake balls in the freezer and only took out about 10 at a time. I used a fork to dip and then just slipped the ball off with a toothpick. They weren't perfect but they looked pretty darn good! Like so many other reviewers I can't wait to try out other combinations. The common vote amongst my co-workers is give up my normal Christmas goodies and just make several different kinds of these! Thanks so much for sharing!

Absolutely wonderful. I followed the recipe to a "T" but I cut it in half. I'm notorius for making dry cakes, no more! It was delicious. The icing was excellent too. Thank you so much for sharing!

Actually Delicious Turkey Burgers

Reviewed: Mar. 11, 2009
These burgers were SO GOOD! I used ground turkey breast so I was a bit nervous they would be dry. That wasn't the case at all. I made a couple of small changes. I didn't have any parsley so I used about a 1/4 cup of finely diced green pepper. I also put in a splash of Worcestershire sauce. I think I'm going to put in a splash of liquid smoke next time to "beef" it up a little bit. My husband said we should have a weekly burger night with these! My four and six year old gobbled them up too. Oh, I made our burgers with sauteed (in 1 tsp of olive oil) mushrooms and onions and a slice of Jarlsberg lite cheese.

Banana Crumb Muffins

These muffins are phenominal! They are as light as air. I did make 1 change, I was out of butter or margarine so I used shortening. I can't believe how moist they are. Thank you so much for the wonderful recipe.

Simple Whole Wheat Bread

Reviewed: Apr. 22, 2008
Simply wonderful! This was my first attempt at any bread besides French Bread and it was great. It wasn't that hard and the flavor is MUCH better than storebought. The only change I made was 1 big loaf and 4 mini loaves (apparently I don't have 2 big loaf pans like I thought!) I just reduced the cooking time for the small loaves by 5 minutes. Thanks so much for a keeper!

One Bowl Chocolate Cake III

Reviewed: Apr. 17, 2008
I made this on a spur of the moment. My son wanted to take chocolate cupcakes to preschool for his birthday and I didn't have a cake mix on hand. My hopes weren't high because I can't even make a boxed cake mix come out right. Boy was I suprised. This recipe is WONDERFUL! It was super easy to make and very moist. My husband didn't believe me when I told him it was homeade. Thank you so much for the recipe, it's a keeper for sure!

Lemon Chicken Tenders

Reviewed: Sep. 25, 2007
Quick, easy, yummy and different. This was a great recipe. I didn't change a thing and it was a really nice change of pace from plain old chicken tenders. As a nice bonus my 2 and 5 year olds loved it. I served it with rice and tomato salad.

Oaty Cereal Bars

Reviewed: Sep. 19, 2007
Excellent! Perfect for the kiddos afternoon snack. They were very easy, little cleanup and I was able to make them into bars. I loved how they weren't incredibly chewy or crunchy, my 2 year old would have had a hard time with that. Thanks for the great recipe!

Chicken Biscuit Pie

Reviewed: Aug. 28, 2007
This recipe was outstanding! I did change a couple of things however. I used 2 TBS Smart Balance spread and 2 TBS olive oil instead of 1/3 cup of butter. I only had a bag of frozen mixed vegetables on hand and I made some cheesy Bisquick biscuits. I got a huge thumbs up from the family and the recipe went into my "favorites" book. Thanks!

Peanut Butter Pancakes

Reviewed: Jun. 9, 2007
Very tasty! Simple and quick and the kids really liked them. The only reason I gave it 4 stars instead of 5 is because they weren't quite peanut buttery enough for our tastes. However, it was a really nice change from plain old pancakes.

Beef Peach Pie

Very tasty! The kids cleaned their plates and it was perfect for a non-meatloaf lover like me. I did however use ground turkey and I think it could have cooked a bit less. It's going in my keep 'em recipe book. Thanks!

Blueberry Sour Cream Coffee Cake

Reviewed: Mar. 6, 2007
Yum! Yum! Yum! This made the perfect special Sunday morning breakfast. Baked it the night before and it was just as good the next morning! The only change I made was using a 9x13 pan instead of a bundt pan (I know my reputation for bundt pans!). Thank you for the wonderful recipe!

Applesauce Cake IV

Reviewed: Feb. 6, 2006
Oh my yummy! This cake was awesome. I made it for hubbys birthday and he and the kids loved it. The only changes I made were adding a cream cheese frosting and a shredded zucchini (I was out of raisins). It was a little rich with the frosting but great just the same. Thanks so much for this wonderful recipe! (In case anyone has trouble finding a frosting recipe like I did, 1 1/4 cup powdered sugar, sifted, 1/3 cup lite cream cheese, 1/2 tsp vanilla Combine and spread on warm cake)

Chocolate Mousse Cake I

Reviewed: Apr. 4, 2004
This tasted really good and it was a hit but I'm not sure if it turned out or not. The cake rose beautifully in the oven and about 15 minutes of cooling it fell. Is it supposed to do that? As good as it tasted I would make it again though.
