I am currently a stay-at-home mom with a 4 year old son and 3 mo. old daughter. Some day I hope to cook healthy meals for my kids but my preschooler is super-picky and these days turns up his nose to most of the things I make. My husband is a willing eater, though!
My favorite things to cook
I love to bake (mostly cakes and cookies) but try to limit this because my husband doesn't have a sweet tooth and I don't want my son eating sugar (that leaves me, and I'm trying to lose my baby weight!) We eat a lot of chicken because I don't eat red meat.
My favorite family cooking traditions
My mom's family is Italian and we have a great tradition of all kinds of fish on Christmas eve. My own family is extremely fond of sandwiches and Mexican food.

Chocolate Chocolate Chip Cookies I
These are awesome! They aren't my favorite since they are SO chocolatey, but the chocoholics can't get enough. I baked them for 10 minutes and they were still perfectly chewy--more like a brownie than a typical cc cookie. I did use 1/2 white and 1/2 brown sugar but forgot to try 1/2 shortening for the butter. Next time I'd like to try white chocolate chips for a change.

Pancakes on the Go
i really, really liked these pancakes, as did my husband and 4 year old son. i appreciate that they are whole grain but not at all heavy. in fact, you can't even distinguish the oatmeal in there (i used quick oats.) the sweetness is great because they don't need syrup, so i can eat them while i'm standing at the stove making the second batch. even the batch i burnt tasted good! this is will be a weekend favorite from now on. yay!!

Brown Rice and Black Bean Casserole
I was a little hesitant to try this recipe but was pleasantly surprised. It just seems like an odd mix of ingredients and I wasn't sure what to expect. It was sort of like a rice bowl with a slightly Mexican flavor (from the chiles and cumin.) I doubled the rice, mushrooms, and carrots and I'm glad I did or it would have been too heavy on the zucchini. I also used cheddar cheese because I don't like swiss. I'm not sure I'll make this on a regular rotation, but it was tasty.
