About this Cook
I'm 27, divorced, and a mom of 4 wonderful kids. I attended the Art Institute of Colorado for Culinary Arts. I had to leave before I got my degree though, one of these days I'll go back and get it. Cooking is what I love to do. The kitchen is pretty much home to me.
My favorite things to cook
Appetizers, Salads, Pasta. Anything I think the kids will eat lol
My favorite family cooking traditions
My mom's soft set cheesecake and my great gramma's sugar cookies. We only cook those around thanksgiving and christmas
My cooking triumphs
Pretty much any sauce. I have a knack for them it seems. My Buerre Blanc is wonderful :) I can make some good Crab Rangoons too.
My cooking tragedies
Well My burner caught on fire at school once and we had to call the fire dept. LOL Can't live that one down.

Restaurant Style Chicken Nachos
I love this recipe! I made it for my bf's dad for his birthday and he just loved it. I substitute canned chicken (easier when you're in a fix) and I also layer the nachos with some nacho cheese sauce as well as shredded cheese. I find that if I cook most of the juice out of the chicken/salsa mixture, the nachos don't get soggy.

I LOVE this recipe! I've been making these since April and they are fantastic, not to mention addicting! They are a huge hit at family gatherings :)
