Shrimp Scampi Bake

So good. So easy. I don't cook a lot of shrimp but this one was just perfect. My husband said it was the best shrimp he'd ever had. We ate it with mashed potatoes and green beans. Yum!

Fish Tacos

My first time having fish tacos and we really enjoyed them. The sauce I would say 5 stars, the fish 3 - so I split the difference and went 4 overall. LOVE the sauce (made as stated) but the fish seemed a little bland somehow.... Maybe needs a good squeeze of lemon or lime and a bit of salt right out of the fyer? Overall will definitely make the sauce again and tinker with the fish. Thank you!

Chicken In Basil Cream

This was delicious! Made exactly as stated except for the pimientos as our store does not carry them. I used capers instead. Husband and I both gobbled it up. YUM! Next time might thicken the sauce a bit with flour/water paste…. Served with green beans and rice. Thank you!

Zucchini Alfredo

Excellent! A new favorite. I did add a little extra milk to make more sauce, and will season it up as others suggest next time with more garlic, mushrooms, salt etc as on its own is a little bland. The basil is just delicious in it! I love this recipe!

Buffalo Chicken Fingers

It makes me sad to say that we really didn't care for these at all. I found them too dry and the texture wasn't crispy enough. Maybe if dipped in hot sauce to coat the crumbs? But definitely need hot sauce/ranch to dip them in afterwards. Not for us thanks.

Vinegar Grilled Chicken

Excellent and so easy to make. The only change I made was to use white balsamic vinegar instead of plain (I was out of regular vinegar). Tender and juicy with lots of garlic flavor. Sliced and served on top of a salad. My new favorite chicken recipe. Thank you GodivaGirl!

Bow Tie Medley

Other than a few simple changes (extra mushrooms cuz I had some to use up, rotini instead of bow pasta and less pasta than called for, pizza seasoning blend instead of oregano cuz it's all I had...) I followed the recipe fairly closely. Hubby and I thought it was delicious. A nice, simple summer supper.

California Roll Salad

My husband and I both love California rolls and although this DOES taste like a California roll, somehow it just seemed strange to us to eat them in a salad form (maybe it was the lettuce?). My husband only managed 2 bites.... So for us despite the great reviews we won't be trying it again.

Chipotle Crusted Pork Tenderloin

This was my first attempt cooking pork. This recipe was very easy to follow and my husband raved about it. I think I will also reduce the chipotle next time as it was quite spicy. DH and I both agree that the same rub would be good to try with chicken breasts for a santa fe style salad.

Broccoli Chicken Braid

This was pretty good and relatively easy. I did find that I needed to bake mine a little longer as it was kind of doughy after the time suggested. The only other thing I would change is to omit the salt next time as I found that the pre-packaged crescent rolls were salty enough on their own. Made good leftovers too.

The chicken was very tender and juicy but we found the beer taste a little overpowering. Might recommend trying to finish it with a chipotle rub or some other spices in the marinade.

One Pot Pinto Beans

UPDATE: Made again with 5 teaspoons salt instead (could still almost use a bit less)- turned out great. Again, just used the food processor and added water until I got the consistency I wanted. Makes quite a lot so I separated into containers and froze some. Was excellent for adding to a quesadilla - lots of versatility and were delicious. With the change to these modifications I now give it 5 stars. This has potential to be a great recipe but TELL me the salt content was a typo? I followed the recipe exactly trusting that 5TBsp salt would somehow mellow out in the beans. It did not. They were WAY too salty and we could not eat them. However, the overall flavor (minus the salt) was great! I did find though that a potato masher was not great for getting them to a creamy consistency, I put them through my food processor and added more water until they were the consistency I was looking for. Next time will try with 5 teaspoons of salt maybe?

New Potatoes with Caper Sauce

Good. I enjoyed the tanginess of the capers and vinegar. I tried to follow recipe exactly but found the quantity of potatoes confusing. It says “12 new potatoes” which to me are the baby ones which would not have been enough. I used a 2 lb bag of baby potatoes and it worked great. Yummy!

Spinach and Orzo Salad

We thought this was ok. Not great, not bad. We found the balsamic vinegar a little overpowering but liked the mix of salad ingredients. My brother suggested that he thought the same salad would taste really nice with Italian dressing and I thought that was a pretty good suggestion too.

Paige's Feta Slaw

I made two changes. 1 - I used greek seasoning as I was out of Italian and 2 - I used a 16 oz bag of coleslaw (not the 8.5 as recipe states I couldn't even find one in the store that small). With more cabbage mix the dressing ratio was good. Overall - I really enjoyed this.

Best Big, Fat, Chewy Chocolate Chip Cookie

I wouldn't say that these are the best EVER, but they are really good. I followed recipe closely the only change I made was to bake them closer to 19-20 minutes. They stayed soft and chewy.

Belles Hamburger Buns

Followed EXACTLY. They were good but I did find them a little heavy for what I like in a hamburger bun. Pretty easy to make though. A nice treat to have homemade buns with a sunny bbq. Thanks!
