Chicken Florentine Casserole

Delicious. The only made 2 changes 1) I diced and sauteed the chicken in a little garlic 2) I used fresh spinach and sauteed it with the mushrooms. So good. Thanks!

Brie en Croute

As stated, I did not fall in love with the recipe. I was not crazy about the parsley and almonds together with the brie. This said however, it is a tasty and easy appetizer that can be easily altered to suit different tastes ny playing with the nuts/jams/spices etc.

Creamy Dill Cucumber Toasties

I made this for a recent baby shower and everyone really enjoyed it. My only substitute was using mini bagels instead of baguettes as the baguettes I had purchased were really hard and crumbly. The flavor with the dill and cucumber is somewhat reminiscent of tzatziki. To make the cucumbers look more decorative and ribbon-like, a potato peeler worked great!

Parmesan and Basil Chicken Salad

One of the best sandwiches I've ever had. Definitely the best chicken salad. So yummy! I didn't quite have a full cup of basil so added a little dried but otherwise followed exactly. Might consider slightly less mayo next time. Thanks for a great recipe!

Made exactly as stated. Easy, tasty side dish. Next time I will do what others have suggested and try adding in some tomatoes or maybe using pesto instead (or in addition to) the basil.

Annie's Fruit Salsa and Cinnamon Chips

UPDATE: a day or 2 after when this was quite soggy looking I used the leftovers up by blending with ice and a little bit of fruit juice. It made a delicious slushy fruit drink! This was just excellent. I made the fruit salsa as stated but you could definitely use any of your favorite fruit combos. The chips I did a little differently though, I cut up tortillas, brushed them (ok, dunked them – it was faster!) in melted butter and then shook in a zip loc with brown sugar, white sugar and cinnamon to coat. They took me about 14 minutes to bake at 350 and took several batches to get a significant number of chips. I found that there was way more salsa than chips with this recipe. Either way, they were gobbled up and so yummy! I definitely plan to put this into a regular party food rotation.

Shrimp Scampi Bake

So good. So easy. I don't cook a lot of shrimp but this one was just perfect. My husband said it was the best shrimp he'd ever had. We ate it with mashed potatoes and green beans. Yum!

Fish Tacos

My first time having fish tacos and we really enjoyed them. The sauce I would say 5 stars, the fish 3 - so I split the difference and went 4 overall. LOVE the sauce (made as stated) but the fish seemed a little bland somehow.... Maybe needs a good squeeze of lemon or lime and a bit of salt right out of the fyer? Overall will definitely make the sauce again and tinker with the fish. Thank you!

Chicken In Basil Cream

This was delicious! Made exactly as stated except for the pimientos as our store does not carry them. I used capers instead. Husband and I both gobbled it up. YUM! Next time might thicken the sauce a bit with flour/water paste…. Served with green beans and rice. Thank you!

Zucchini Alfredo

Excellent! A new favorite. I did add a little extra milk to make more sauce, and will season it up as others suggest next time with more garlic, mushrooms, salt etc as on its own is a little bland. The basil is just delicious in it! I love this recipe!

Buffalo Chicken Fingers

It makes me sad to say that we really didn't care for these at all. I found them too dry and the texture wasn't crispy enough. Maybe if dipped in hot sauce to coat the crumbs? But definitely need hot sauce/ranch to dip them in afterwards. Not for us thanks.

Vinegar Grilled Chicken

Excellent and so easy to make. The only change I made was to use white balsamic vinegar instead of plain (I was out of regular vinegar). Tender and juicy with lots of garlic flavor. Sliced and served on top of a salad. My new favorite chicken recipe. Thank you GodivaGirl!

Bow Tie Medley

Other than a few simple changes (extra mushrooms cuz I had some to use up, rotini instead of bow pasta and less pasta than called for, pizza seasoning blend instead of oregano cuz it's all I had...) I followed the recipe fairly closely. Hubby and I thought it was delicious. A nice, simple summer supper.
