Italian Breaded Pork Chops

Operator error: hubby says not crispy enough, but I tried to bake in a skillet that wasn't big enough. The chops were huge and as a result, not all sides were crispy. Used half panko and half Italian bread crumbs. Will try again if I cut the chops in half first.

Incredibly Cheesy Turkey Meatloaf

Kid-friendly! Used shredded cheese and Sweet Baby' Ray's Honey BBQ sauce. I'm not a meatloaf fan, but this rocked! Going in keeper file. Served with zucchini boats. Nummy!

Easy, Cheesy Zucchini Bake

Mine turned out very watery! I sauteed the sliced zucchini in a little butter, garlic powder & basil and put n 8x8 dish, then sauteed fresh mushrooms in butter & a little salt to make them sweat, and put on top of zukes. Then cooked turkey and added some creole seasoning for flavor. Topped with spaghetti sauce and baked (covered) 25 mins, did not add corn. Removed foil & added shredded cheese, baked 10 mins. Kids thought it was okay but I liked the low-carb-ness of the dish.

Portobello Mushroom Burgers

I'd rate as a 5 but kids and hubby weren't too impressed with this. Served on hamburger buns. I think they didn't quite cook long enough. I used the Greek House Dressing from this site to brush over the caps as they baked. Nice!

Bacon Cheeseburger Cake

Made this for son's 9th bday party...per reviews, used the peanut butter frosting and it was yummy. Used a golden vanilla cake for the "bun" and made a brownie in a pie pan for the "patty." Since reviews said the colored candies made it too hard to cut, I only used green candy slices, rolled out and put around the edge for lettuce, and red candy slices, rolled out and used a small cup to make round slices for "tomatoes." Used a bread knife to slice. All the kids LOVED this recipe! Great presentation.

This was "okay..." It was a little "mealy" for my tastes, but then I'm not too experienced with split peas. Kids ate it, picky son said "it was good, I give it 4-1/2 stars."

Swiss Chicken Casserole II

This was quick and tasty, despite the prep time stated: I cut 4 small raw chicken breasts into cubes and seared in a pan. I had accidentally dropped the cubes into the soup mixture (before reading reviews!) so I fished them out and seared in a little olive oil, and the bit of soup on them made a nice coating. Then I added 1/2 tsp curry powder and 1 tsp minced garlic, per other comments about the dish tasting "bland." Sprayed pyrex dish with Pam, added curried chicken, swiss cheese slices, then stuffing mix already mixed with soup, added extra milk to coat all the stuffing, and put layer of stuffing over cheese and chicken. Drizzled 1/4c melted real butter on top and baked for 35 mins. Everyone in the family, except the texture-challenged son, went back for seconds! (not normal!) Will put this in my huge "keeper" file; thanks for the post!

Chicken Alfredo

I agree with the numerous reviews that this recipe needed twice as much milk as directed. I added 1-1/2 cups total because the cream cheese became so sticky and thick. Next time, I'll use chicken broth and milk, because all the milk diluted the spices and I had to add more. Not good when trying to reduce sodium. Thanks for the post, but I may stick with my recipe from college where you use 1 pint whipping cream, 6 tbsp butter, and simmer both until bubbles form. This type of sauce is thinner and more suitable for pasta; the cream cheese sauce in this recipe overwhelms the pasta, especially if you're using thinner types. Thanks for the post, but if you follow this recipe, DOUBLE THE MILK!

Best Cream Of Broccoli Soup

Used 1/2 an onion, didn't use celery. Soup turned out great when a cold front moved through on a Saturday afternoon. We went to a city "WinterFest" where they bring in a truck that blows snow, made of bags of ice. Y'all up north are probably laughing, but here in the tropics of Houston, it's a novelty! Anyway, I used a 1/2 pint of whipping cream for 1 cup of the milk, and 1 cup of whole milk for the rest. Needed some salt, and I also added about a cup of shredded cheddar and a piece of provolone as it simmered. Used potato masher as per other reviews, and left some big chunks for flavor. The "picky" kid ate his whole bowl! Will keep. Thanks for posting!

Chicken and Dumplings III

I tweaked, and it was wonderful! First time to make for kids, 10 and 8, they loved it. I boiled 3 boneless/skinless chicken breasts in water, then added an onion (chunked), 2 stalks celery sliced; 16 ozs crinkle cut carrots, 1 cup frozen corn, and 1/2 cup frozen peas. Also added homemade balsamic/Italian vinegar dressing which gave the broth a rich, deep flavor. After boiling 20 mins, I shredded the meat, then returned to the broth. Added 1 can cr. mushroom soup and 1 can cr. chicken soup, whisked to combine, then took another's tip about using regular biscuits and pinching off thumb-sized bits. I added enough to cover the top of the broth/veggie/chicken mixture and simmered on med-hi for almost 20 mins. Next time if I don't have balsamic dressing, I'll add about 1/3 to 1/2 cup balsamic vinegar to the broth as chicken boils for a wonderful flavor. I got this idea while making ribs, and one recipe called for adding 1/2 cup teriyaki to the water. Same idea, different acid, worked great and I'll do it again. Thanks for the post; kids can't wait to have leftovers for dinner tomorrow night! (me neither: cook once, eat twice!)

Balsamic Roasted Red Potatoes

Just okay...I was excited about the recipe, unfortunately the 10 and 8yo kids weren't as fond of it. I cut the potatoes into quarters and boiled for 15 mins before roasting, to lessen the oven time, since I was doing steaks in the oven simultaneously. I guess we'll keep looking; don't "not" try this because of my review; it's good to see what your own palate likes and dislikes. Thanks for the post!
