Chickpea Curry

Reviewed: Feb. 9, 2006
I really can't rate this recipe as its written because I just used it to see what kind of spices should be used. That said I used 1/2 tsp dried ginger, 1/4 tsp ground cloves, 1/2 tsp ground cinnamon,2 tsp cumin, 1 tsp coriander,1/4 tsp cayenne, 1 tsp turmeric,1/4 tsp curry, 19 oz can of chickpeas drained, a hand full of chopped cilantro, an undrained can of diced tomatoes, 2tsp of thai chili garlic sauce, and a squirt of ketchup (was out of tomato paste) let it simmer until the juice had reduced.......and it was heaven

Chocolate Gravy II

Reviewed: Feb. 9, 2006
This recipe is great. I make it for my kids on special occasions. It makes alot so unless you have 5 or 6 people to serve I would cut in half. (i never do being that I have 4 kids lol) Also in a pinch I have used 5tbsp. hot chocolate powder for the cocoa and the sugar with good results not quite as chocolatey but good none the less.

Banana Crumb Muffins

Reviewed: Feb. 5, 2006
I can't really rate this as written because I changed a few things. First I used 1/2c all purp flour, 1/2c whole wheat flour, and 1/2c oat bran instead of just all purp. I used 4 bananas instead of 3 and used half all purp flour and half oatmeal for the topping. With these alterations these were great and a little healthier. Next time I'm going to substitute some of the butter with applesauce to cut down on some of the fat.

Bundt Dutch Apple Cake

Reviewed: Feb. 2, 2006
This recipe was easy to make and taste good it was a little heavy to me for cake but not as heavy as a bread. I used my kitchenaid food processor to cut the apples so they were more like thin slices than wedges. Waiting for the husband to taste it to see if its a keeper (he's allergic to dairy) but me and the kids think its great.

Kettle Corn

Great snack for the kids and they love it. I do add just a little salt to have that great sweet n salty taste. I just the crank style popcorn pot I bought my husband and turns out every time. I did not like it with brown sugar though.

Vegetarian Moussaka

Reviewed: Jan. 24, 2006
This was great as written but the second time I made it I doubled the lentil tomato mixture and doubled the beauchemel sauce and it was excellent thes two sauces is what really makes the recipe. Oh also I would peel the eggplant to avoid stringy skin.

Easy Masoor Daal

Reviewed: Jan. 18, 2006
I loved this recipe and so did my picky 4 year old. Next time I will cut back on the cayenne as it was a little too much for the kids but overall... FANTASTIC! oh I would also add some chopped carrot neat time so would be more of a complete meal.

Scarlett's Best Ever Sugar Cookies

Reviewed: Dec. 7, 2005
These were not a sugar cookie....with that said these were great as a pecan sandie shortbread kind of cookie not to sweet a great cookie to eat with coffee. I substituted 1tsp baking powder and 1/4tsp baking soda for the cream of tartar and baking soda in the recipe since I didn't have any cream of tartar Still they came out great and after making 50 yesterday I'll be making 50 more today.

White Chocolate and Cranberry Cookies

Reviewed: Dec. 2, 2005
This cookie was ok. I expected it to be great. I did make a few changes based on what I had on hand and personal preference. I used semisweet chocolate chips( hate white) and captain morgans rum. It was ok nothing I'd be craving to make again but a nice change from the same old choc. chip. Thanks

Gingerbread Men

Reviewed: Dec. 2, 2005
These cookies were so much easier to cut out than others I have tried and they tasted pretty good. The only thing i changed was used coconut cream pudding instead of butterscotch because thats what I had and they were still good. Will definitely make again 4 year old could have rolled dough and cut cookies all day. Also if you really like gingerbread this is not the recipe for you (being that I don't like it I thought this was great)

Delightful Apple Spice Muffins

These were ok....meaning the kids did eat them, But I thought they were bland. I really don't think I would make them again unless I made alot of alterations and then is it really the same recipe.

Vegetarian Cottage Cheese Patties

I just wanted to say you don't have to fry these. I make them into patties and put directly into lightly greased 9x13 and bake about 10 min then add the soup cover and bake the 20 minutes.

Dairy Free Whole Wheat Pancakes

Reviewed: Aug. 31, 2005
I thought this recipe was excellent. My four year old wants to have pancakes like every other day and now I don't have to tell him no. These are high in fiber and really healthy. The only adjustment I would make next time would be to use vanilla extract instead of the almond.

I thought this recipe was ok though a little bland. The only change i made was to use puff pastry as the crust. Overall a good base but needs some spices.

Darra's Famous Tuna Waldorf Salad Sandwich Filling

Reviewed: Aug. 23, 2005
This was a nice change to the regular old tuna salad. It definitely needs a second can of tuna though. I used tuna packed in water and a little less curry because I normally don't like it and it turned out great. I did notice it didn't say whether or not to drain the tuna I did and I think it would have been to runny otherwise. Thanks for the great recipe to get us out of our sandwich rut.

Peanut Butter Cookies II

Reviewed: Aug. 6, 2005
These were okay not alot of pb flavor and you couldn't taste the coconut at all which was why I tried this recipe. I also found these to be really greasy and the next day really crunchy. I prefer mine to be soft in the middle. Overall it was ok but I don't think I would make them again.

Healthy Banana Cookies

Reviewed: Aug. 3, 2005
These were good but not pretty. I used really ripe bananas so they pretty sweet and I also substituted raisins because I didn't have any dates. Overall if i can get my kids to eat them this recipe is a keeper just not one I'd hand out.

Playgroup Granola Bars

Reviewed: May 4, 2005
I found this recipe to be ok. I like crunchy granola bars and these were chewy like a bar cookie but none the less me my husband and my twin 18 mo. olds enjoyed them. Couldn't convince the thre year old though. The only change I made was to add craisins instead of raisins.

Veggie Bangers

well....this recipe took a long time to make and in the end my 3 kids wouldn't even touch it. I tried it and it just tasted like sauteed leek and i only used one. My advice would be to not make this. Sorry
