Garden Basket Pasta with Clam Sauce

Reviewed: Mar. 30, 2006
WOW I don't usually like clams and I loved this recipe. I followed the recipe except I didn't add tomatoes (didn't have any) and I used vermecelli instead of fettucine. The only thing I would do different next time is cut back on the parsley.

Actually Delicious Turkey Burgers

Reviewed: Mar. 20, 2006
This recipe was a lifesaver for me I do not eat meat and haven't since I started cooking for myself. My husband has recently decided to start eating it again and I'm clueless. Well this was easy to make and my husband said it was delicious much moister than others he's tried..... Now if I could just stop breaking them to pieces checking to see if their done! :)

Ginger Glazed Mahi Mahi

Reviewed: Mar. 20, 2006
Hmmm... I suppose I will give this a three because my husband loved it and I could get 1 of my four children to eat it. I however wasn't impressed it was to salty for one and not enough ginger taste for me. Overall okay...just not good enough to make again.

Lemon-Orange Orange Roughy

Reviewed: Mar. 9, 2006
I will give this a three because the sauce was good especially after it reduced and got thick. The fish on the other hand......YUCK it was my first time having orange roughy I wish someone would have said how fishy it tastes. I would however use the sauce on tilapia or maybe tuna steaks.

Addictive Sweet Potato Burritos

Reviewed: Mar. 7, 2006
I scaled this down to serve four ( got six overstuffed burritos) for the bean mix I only used half of the beans and estimated the spices and used vegetarian cheese. All in all I would say it was a nice change of pace but I don't know if I would consider them addictting. Definitely needs to served with sour cream otherwise too sweet.

Crab Stuffed Flounder

Reviewed: Mar. 6, 2006
My husband really enjoyed this dish, I however didn't like the sauce on the top to spongy for me would prefer it with a holliandaise type sauce and would cut out the salt completely too salty for me but over all pretty tasty. I didn't use the green peppers and used ritz crackers instead of saltines and added a bit of chesapeake bay seasoning. Also for the topping I used 4 tbsp mayo and added a little water because it was very thick. Just want to add if you really like crab you might want to double the stuffing I topped three fillets with what the recipe called for.

Pineapple Cobbler

Reviewed: Feb. 16, 2006
This recipe was good but way to heavy on the butter. I used 1/4c butter and still thought it was to much can't imagine 1/2c. I also didn't use cherries because I didn't have any. Great recipe to use if your looking for a quick easy dessert.

Cinnamon Rolls I

Reviewed: Feb. 12, 2006
I have made these and think their great however they are not for the person who wants a "Cinnabon" roll not enough butter and cinnamon sugar but thats why I like them. Also to avoid getting squished cinnamon rolls from trying to cut them if you use dental floss ( by placing floss under roll and crossing it over the top) you will get perfectly shaped rolls every time.

I did half all purpose flour and half whole wheat increased the sugar to 3/4c added two spoonfuls of applesauce( to decrease the dryness others complained of) and a handful of craisins then added a struesel topping. Results....MMMMM! Two out of three kids agree :)

Orange Glazed Carrots

Reviewed: Feb. 9, 2006
These tasted good and were a nice change They didn't have any orange flavor hence the three stars. I think next time I will cook in oj as some other reviewers suggested. Also I didn't add all the brown sugar as I still wanted to taste the sweetness of the carrots.

Chickpea Curry

Reviewed: Feb. 9, 2006
I really can't rate this recipe as its written because I just used it to see what kind of spices should be used. That said I used 1/2 tsp dried ginger, 1/4 tsp ground cloves, 1/2 tsp ground cinnamon,2 tsp cumin, 1 tsp coriander,1/4 tsp cayenne, 1 tsp turmeric,1/4 tsp curry, 19 oz can of chickpeas drained, a hand full of chopped cilantro, an undrained can of diced tomatoes, 2tsp of thai chili garlic sauce, and a squirt of ketchup (was out of tomato paste) let it simmer until the juice had reduced.......and it was heaven

Chocolate Gravy II

Reviewed: Feb. 9, 2006
This recipe is great. I make it for my kids on special occasions. It makes alot so unless you have 5 or 6 people to serve I would cut in half. (i never do being that I have 4 kids lol) Also in a pinch I have used 5tbsp. hot chocolate powder for the cocoa and the sugar with good results not quite as chocolatey but good none the less.

Banana Crumb Muffins

Reviewed: Feb. 5, 2006
I can't really rate this as written because I changed a few things. First I used 1/2c all purp flour, 1/2c whole wheat flour, and 1/2c oat bran instead of just all purp. I used 4 bananas instead of 3 and used half all purp flour and half oatmeal for the topping. With these alterations these were great and a little healthier. Next time I'm going to substitute some of the butter with applesauce to cut down on some of the fat.

Bundt Dutch Apple Cake

Reviewed: Feb. 2, 2006
This recipe was easy to make and taste good it was a little heavy to me for cake but not as heavy as a bread. I used my kitchenaid food processor to cut the apples so they were more like thin slices than wedges. Waiting for the husband to taste it to see if its a keeper (he's allergic to dairy) but me and the kids think its great.

Vegetarian Moussaka

Reviewed: Jan. 24, 2006
This was great as written but the second time I made it I doubled the lentil tomato mixture and doubled the beauchemel sauce and it was excellent thes two sauces is what really makes the recipe. Oh also I would peel the eggplant to avoid stringy skin.

Easy Masoor Daal

I loved this recipe and so did my picky 4 year old. Next time I will cut back on the cayenne as it was a little too much for the kids but overall... FANTASTIC! oh I would also add some chopped carrot neat time so would be more of a complete meal.

Scarlett's Best Ever Sugar Cookies

Reviewed: Dec. 7, 2005
These were not a sugar cookie....with that said these were great as a pecan sandie shortbread kind of cookie not to sweet a great cookie to eat with coffee. I substituted 1tsp baking powder and 1/4tsp baking soda for the cream of tartar and baking soda in the recipe since I didn't have any cream of tartar Still they came out great and after making 50 yesterday I'll be making 50 more today.
