Marinade for Steak I

This marinade was pretty good. I cut it down to 10 servings as I wasn't sure of how much meat 20 would marinate. I let the meat (top sirloin) sit for about 24 hours and it was tender and juicy. I did tenderize it prior though. I subbed honey dijon as it was what I had and used onion powder instead of fresh onions since my 5 year old will only eat them if he doesn't know they are there. Overall good but seems like too much oil...

Absolutely Fabulous Greek/House Dressing

I love greek food and this dressing makes for a great salad. I scaled it down to eight servings and made it in my italian dressing carafe. I used honey dijon mustard as it's what had on hand. I dumped all the dry ingredients in first followed by the oil and vinegar. A good shake was all that was needed. Even my 12 month old loved it. I'll def be keeping this on hand...

Butter Beef

I gave this four stars because it was really good but I did have to make some changes. I browned the beef in batches with garlic powder and cracked pepper. I then carmelized 1 small onion sliced into rings and melted the rest of the butter with it before adding it to the beef and onion soup. I'll be reducing the butter to probably 1/3 c next time. Also I was curious to see if this could be made in the oven as well so I baked it in a TIGHTLY covered baking dish for 3 1/2 hours at 300 degrees and it was moist and tender. Great easy recipe.

Oven Roasted Potatoes

These are great and oh so easy. I've been making them for months now and they come out perfect with red or white potatoes. One change I made is using 2 t. of italian seasoning blend in place of the herbs. I keep the salt, garlic, parsley and red pepper the same. I also roast them for an hour in a 400 degree oven stirring every 15 minutes...

Chicken Tequila Fettuccini

Great recipe. Used pre-cooked grilled chicken strips that I added at the end to heat thru. Only used 2T tequila and serrano chilis. Will make again and again...

Shrimp Scampi Bake

This was quick and easy. I baked for the time listed and it turned out perfect. My changes are as follows... I used 11 Tablespoons of butter, dried parsley, and 12 oz of shrimp. Kept everything else the same. Served over pasta. Great recipe...

Mrs. Sigg's Peanut Butter Cookies

I've had better cookies than these but figured I'd review them anyway. On behalf of the recipe I did follow other reviews and made a few changes. I halved the recipe (still made 40 cookies) and used 1/2 c of butter, 3/4 c of peanut butter and 1 1/2 c of flour. I added mini chocolate chips to half of them. These didn't have a strong peanut butter flavor despite adding extra pb. I'll still be looking for my go-to recipe...

Spicy Crispy Beef

I have to say I was a sceptic as I'd never deep fried beef strips before but man oh man was this good. I'm not a huge fan of bell pepper so I used match stick carrots instead. Also I only had rice vinegar on hand so I used that for both the wine and vinegar. I served this with steamed rice, cucumber sunomono and kimchi. Kids loved it...

Crushed Pineapple Sour Cream Pie

I found this while looking for a way to use up crushed pineapple. After reading the reviews and seeing how little 8 oz of pineapple was, I decided to double the recipe. I used a 20 oz can of pineapple, kept the sugar the same and doubled the pudding and sour cream. It came out nice and thick and I only had about 1/2 c left over after filling a ready made graham crust. Which by the way is good by itsself. Not a fancy pie but it tastes great :)

Fried Okra

Just what I was looking for. I'm from the south so fried okra is near and dear to me. I followed the review for using frozen okra and it came out great. I didn't have cornmeal on hand so I used 1 c of jiffy mix and 1 c of flour for the breading. I gave this recipe 4 stars only because of the changes I had to make otherwise it would have gotten a 5.

Tzatziki Sauce II

Yummy! We're overseas so authentic greek food is very common but every once in a while I prefer to have it at home. This recipe is very close to what they serve at the restaurant nearby. I use an english cucumber, to avoid seeds, and German plain whole-milk yogurt becuase it is a bit thicker. To cut down on the waiting time I layer paper towels and gently squeeze out the moisture. I also use minced garlic and add a drizzle of olive oil. Great recipe...

Cucumber Sunomo

Great recipe! I decided to use this when I was in a rush and needed a recipe that was faster than my usual. I used 1 large european cucumber to avoid the seeds and kept everything else at the listed amount. Served with asian fire meat, steamed rice and kimchee. Will be making this often!

Mexican Wedding Cake

I searched for years before finding this recipe. This is my second time making it and the only change I've had to make is to increase the baking time by 15 minutes. Other than that this recipe is dead on. I don't normally have time to allow the cake to cool totally before pouring the sauce on but I don't think it really matters.

Country Style Fried Potatoes

These are great. After partially browning the potatoes I added a small amount of water, 2-3 TBSP, and quickly covered to speed up the cooking time. Once the water cooked out I fried them until done. For more flavorI added the salt, pepper and garlic powder while they were still cooking. Left the paprika out all together. Wonderful recipe...

Watergate Salad

I've been making this recipe for years now and just love it. I honestly think I could finish the whole bowl. My only tips would be to combine the pudding mix and pineapple first, then gently stir in the pineapple and marshmallows. This allows you to mix it thoroughly without breaking doen the marshmallows. Then just fold in the cool whip and chill.

Lemonade Pie III

I gave this 3 stars because it doesn't really seem like a "pie". The flavor reminds me a lot of a key lime pie, which I love. The consistency however is a bit strange. I suppose for the ingredients used it set just how it should have. I ended up putting the rest in the freezer to try to firm it up a bit. Next time I'll try adding a pack of lemon flavor pudding... or maybe just sticking to key lime pie.

Bourbon Chicken

This didn't remind me of Bourbon Chicken at the mall at all. After reading other reviews I upped the brown sugar and only used 1/4 cup of bourbon. I decreased the marinating time to try to reduce the alcohol flavor but it is still a bit strong. Probably won't make this again. Without the bourbon it would make a decent marinade.

Hamburger Vegetable Soup

This was ok. Was more of a stew but it could be thinned down. I subbed beef granules since chicken stock and ground beef didn't quite make sense to me. I also added 1 tbsp of worchestershire sauce. May make again for a quick and healthy meal.

Irish Chicken and Dumplings

This was great. I've been looking for an easy and good chicken and dumplings recipe for so long and I think I found it. The only changes I made were adding 1 tsp. of bouillon granules to the water, using 1 onion and cutting the potates into 1" chunks. I may try with different dumplings next time but this was great as written...

Fried Rice Restaurant Style

This is a great basic recipe. I was "starving" when I decided to make it so I changed it a little. I stir-fried some steak and garlic and left out the peas and carrots. I also added some sliced scallions at the last moment. All in all a great recipe that I'll be using very often...
