Grandma Johnson's Scones

I'm jumping on the bandwagon with two thumbs up. I've cut this in 12 wedges and frozen them individually (separate with waxed paper) so I can just pop one or two into the oven for a Sunday morning coffee with my DH. Given as teacher "thank you" gifts to rave reviews! Endless variations of additions besides those mentioned --- lime zest is fun, as is a cranberry/mini choc chip combo. Melt in your mouth!

Key Lime Pie VII

A Key Lime-loving friend whose b-day I made this for said it was the best Key Lime Pie he'd ever had. (Yeah!) Makes a generous amount of fillng for a 9" pie shell, so you could probably use a larger pie plate if desired. I had to bake it for 12 mins; could've just been my oven, but be prepared. Beautiful with whipped cream and a lime garnish!

Lemony Garlic Shrimp with Pasta

I'm another one that skipped the brining (sorry), but still LOVES the recipe. (And it's QUICK!) The only other thing I did differently was to use some freshly squeezed lime on the pasta (because I had no more lemons). It gave it a bit more of a kick. My family loved this and I plan to make it again. (Thought the idea of adding a bit of fresh broccoli was worth trying too! Thanks!)

Unbelievable Chicken

A wonderful taste for summer and a very flavorful way to grill chicken. (Because of the sugar, be sure to oil your grates prior so it doesn't stick!) This was a hit with my family (teens too) and I plan to keep it in rotation for the outdoor grilling season.

Lemon Glazed Cake

If you're looking for tangy lemon flavor, choose this recipe! A tip: If using a bundt pan, poke holes in the crevices (as opposed to the crowns) and pour half the glaze. Then, add another cup of confectioners' sugar and a drop of food coloring and pour the rest. This gives a thicker, more colorful glaze. Since my young daughter requested this for her b-day, I topped with multi-colored sprinkles. You could add something a bit more sophisticated (lemon wedges?)if serving adults. A keeper!

Jim's Birthday Pasta Salad

Suggestion: Needs a little color, so add red/green/yellow peppers OR broccoli florets OR peas. I doubled the dressing. I'm keeping this recipe around because it looks like a more sophisticated salad (because of the artichoke hearts and chick peas), but it's actually quick-from-the-pantry and easy as can be!

Chocolate Covered Strawberries

Easy...with endless variations! Tip: Use the end of a long-handled, fireplace matchstick to dip the berries in chocolate! It's sturdier and keeps your hands out of the chocolate. It's better than a fondue skewer because berries don't slip.

Spinach Pomegranate Salad

Craig's Cocktail Sauce

This one saved me in a pinch when guests were practically on the doorstep! I quartered the recipe and it worked great. I added a bit more hot pepper sauce than called for, but that is probably individual taste. A keeper!

Carrie's Artichoke and Sun-dried Tomato Pasta

I'm a "recipe tweaker," but with the exception of swapping out bow tie pasta for fettuccine AND lightly sauteing the tomatoes along with rest of the dish there at the end, I've made this for two dinner parties and kept the recipe intact. It's marvelous --- flavorful, colorful, crowd-pleasing. And because it comes together fairly quickly, you don't have to spend your life in the kitchen and miss out on the party!

Creamy Cajun Shrimp Pasta

This was amazingly good! I used skim milk --- still worked well. I sprinkled the slightest bit of Parmesan on the top to serve. Like another reader, I added red peppers for color. Next time I'll add some green peppers or broccoli for the same reason, I think. I might also try to reduce the butter in order to further trim calories. It probably won't be as rich-tasting, but then again, I won't feel as guilty so it's a balance!

Sausage and Egg Casserole

I followed the basic recipe with a couple health modifications --- 100% whole wheat bread, soy cheese, skim milk, Egg Beaters. (Drained and rinsed the sausage to eliminate as much fat as possible.) No one was the wiser and everyone enjoyed the dish. Like another reviewer, I added a couple extra eggs, some milk and a few more pieces of bread because I wanted to fill up a 9 x 13 pan. This recipe will be repeated because it's EASY. Thanks!

Candy Cane Chocolate Chunk Cookies

Few tips: REMOVE IMMEDIATELY means "immediately!" These have candy (canes) in them and will stick to your pan like crazy. Be generous with the non-stick spray. Crush candy canes pretty finely. Otherwise, they melt during baking, leaving a big hole in your cookie and causing them to break. Make cookies smaller than you might think you need to; they spread. Bonus: You get a LOT of cookies per batch. I needed to bake mine 11-12 minutes. Test your first batch. My DH pronounced them "GREAT!"

Pecan Pie V

In an effort to reduce calories and still treat myself to pecans, I used sugar substitutes and cut the butter in half. The pie still turned out wonderfully and no one was the wiser. This is a keeper!

Tender Pork Roast

I reduced the sodium content and used a bone-in roast, turning it halfway as another reviewer suggested. Easy/convenient ---but probably a little bland for my family. I might try shredding and adding a BBQ or steak sauce for sandwiches with the leftovers.

Skyline Chili I

Love the crock pot aspect! Added half a can of refried beans (for taste of beans without the texture). Substituted chopped canned tomatoes for tomato sauce. Reduced meat to 1 lb of ground beef PLUS 1/2 lb spicy ground sausage --- which gave it a little kick even though overall meat was reduced.

Hot Fudge Ice Cream Bar Dessert

Stuffed Peppers

I doctored things up a bit to enliven the taste. Meat mix was half burger/half sausage. Replaced half of the tomato sauce with salsa. Yum!
