Pumpkin Pancakes
So awesome! I used soy milk instead of regular, and it was fine. Like others suggested, I used the back of a spoon to spread the batter, and it worked really well. Served with a fruit salad, this made WAY too much for my family of three. So, I cooked the extras into pancakes, and froze them. Now, we just pop one or two in the toaster in the morning for breakfast. Really great recipe!
