Pumpkin Pancakes
So awesome! I used soy milk instead of regular, and it was fine. Like others suggested, I used the back of a spoon to spread the batter, and it worked really well. Served with a fruit salad, this made WAY too much for my family of three. So, I cooked the extras into pancakes, and froze them. Now, we just pop one or two in the toaster in the morning for breakfast. Really great recipe!

Spinach and Potato Frittata
Really good! I'm a bit lactose intolerant, so I replaced the milk with soy milk, and the cheese with a tablespoon of ranch dressing mixed in with the egg and milk, and it was excellent. I made sure some of the potatoes got nice and brown and crispy before adding in other ingredients, and also added a zucchini in with the spinach. Delish!

Carrot Rice Nut Burger
This stuck together really well, for me. I really blended the rice, as per another reviewers suggestion. However, I found the flavour to be quite cardboard-y. Next time, I'll definately be adding more spices, or something.
