About this Cook
I am currently the President of the Culinary Art Society of Ajijic (CASA) which is our local gourmet cooking club. We have 55 members, meet once a month and compete for prizes in two different categories. Most of our judges are former gourmet chef's or successful restaurant owners.
My favorite things to cook
Good ol' southern soul food. I moved to the south when I was still a teenager and spent the next 40 years there, then moved to Mexico. I also love to make experiemnt at making desserts a new Italian dishes.

This is so easy to put together and sooo good, that my daughter wanted to know if we really had to take it to the Thanksgiving pot luck to share!

Chicken and Red Wine Sauce
In one word...delicious! I did take the advice of some of the others and let the chicken finish the cooking process during the simmer. Definitely a keeper.

Sloppy Joe Sandwiches
My mom used to make Sloppy Joe's whenever we had company coming to stay with us. After she passed away nobody could find her recipe and we all resorted to using Manwich. This recipe is identical to the one my mom used to make and I am so happy to have it. Thank you for posting it.
