Boiled Bagels

These bagels are very delicious, but this was my very first attempt at making bagels. Anyone new to making bagels should note that the instructions should mention that the bagels must be placed in the oven immediately after boiling. I didn't have a big enough pot to boil all the bagels at once, so I had to boil them in two separate batches. The first batch that I boiled then left to sit and wait for the second batch came out of the oven very dense and rubbery. However, the batch that went directly from the boiling water into the oven came out wonderfully!

Very tasty! I threw it all in the slow cooker on low for 6 hours (as opposed to the oven), and it turned out fabulously!

Bacon Quiche

I found this dish to be a little bit rich. The 1/4 cup of melted butter is not necessary, as the grease from the bacon is plenty enough. I did like the smoky taste of the bacon with the biscuit mixture, so I think a good substitution would be to use back bacon or thinly sliced ham instead of the regular bacon.

Power Cookies

Absolutely delicious, very soft and moist! They are a perfect camping/hiking snack. The only variations I made were I added a ripe banana to the bean and sugar mixture, I used pecans instead of walnuts, and I didn’t add coconut. Very yummy!

Spinach Stuffed Chicken Breast

Delicious! My husband and I enjoyed this very much. It made a very elegant meal, full of flavor, and very easy to make. The only changes I had made were, I didn’t use the bacon, I fried the spinach mixture in a tad bit of olive oil (instead of cooking in the microwave) and I added a couple diced mushrooms to it. It turned out wonderfully! Will definitely make this one again!

Three Meat Cannelloni Bake

My boyfriend and I really enjoyed this delicious meal! I made my own pasta the night before, so it ended up taking me about a total of 5 hours to create the entire meal, but it was well worth all the work! We enjoyed it over a glass of wine. The only changes I made, was I used light cream (6%) instead of the heavy cream, and used ground turkey instead of pork. Worked well.
