The Best Bean and Ham Soup

I followed the directions to the letter, but the cake tasted awful. Not even the kids would eat it. It was slightly better the next day, but I still wouldn't make it again.

Strawberry Lassi

I started out making a different strawberry lassi recipe, but we didn't like it, so I kept tweaking until it was just right. In the end it ended up with almost exactly the proportions of this recipe. The only difference is that I double the amount of ice and blend it in with everything else. So delicious! We can never get enough of it!

Ronaldo's Beef Carnitas

This is a solid recipe. Everyone always likes the meat. It's very mild tasting, even with double the chiles and spices, so I think I'll start throwing a few jalapenos in with it. I also cook it in the crockpot on low for about 7 hours.

Apple Pumpkin Muffins

Very good recipe. Everyone liked these muffins. However, as written these would be WAY too sweet. I cut the sugar in half and felt that they were still too sweet with the topping. Next time I'll cut down the sugar even more and leave off the topping. I think these would be good with fresh cranberries instead of the apples, too.

Grilled Salmon I

For the taste of the fish, I'd give this a 4. For the taste of the reserved marinade... boiled and then poured over rice... I give this a 5. Everyone in the family liked this recipe, and it was very easy to make. Thanks so much for sharing it. I did cut the amount of oil in half but left everything else the same.

B.L.T. Salad with Basil Mayo Dressing

It did taste like a BLT, but it wasn't as light as I would have liked. If I were to make it again I would add the basil leaves to the salad mix instead of shredding them and putting them in the dressing.

Yummy Pork Chops

I don't know how this got such good reviews. I made it exactly as written except that I added onions. The onions were the best part. The pork wasn't very tender and didn't taste like anything but italian dressing.

Green and Red Tomato and Corn Soup

This soup is delicious - nearly perfect. I like it best without any seasoning at all... no cumin, no italian seasoning. The flavor of the vegetables is perfect. I only use 3 cups vegetable broth because we like a thicker soup and because my red tomatoes are very juicy. A sprinkling of parmesan cheese on top makes it just right.
