Chicken Salad II
This was great, loved it. I am not one for washing more dishes than I have to so I boiled the eggs in the pot with the chicken. I served this on wheat bread, with a leafy lettuce as a sandwich. I served the sandwich with a recipe from this website called Tangy Dill Potatoe salad, also excellent. I cheated on the potatoe salad and used dried dill vs fresh and it was good. I hate spending alot on ingredients if I have something I'll use it.It was a nice cool meal for a hot Texas day. Tonight we are going to have some Bahama Mama's, also on this website. Great combination for a hot day. I made the salads in the am, went shopping and about my day came home and dinner was ready to go. Make the salads in the am and by dinner time the flavors are all absorbed. Good stuff!!

Tangy Dill Potato Salad
This was great really liked it. So nice to find a potatoe salad without eggs. I put in the Grey Pupon, it was great. I didn't want to buy fresh dill as I try to use what I already have on hand. I used 2 teaspoons of dried dill and it was great. I am sure the fresh would have been better. I served it with a recipe from this website Chicken salad 2, made sandwiches on wheat bread with some leafy lettuce. Perfect meal for a hot summer day. Prepare salads in the AM and by dinner time the flavors have been absorbed. Top off your hot summer evening with some cool Bahama Mama's also on this website.

Roast Chicken with Rosemary
Make it a meal for 4 and cook it faster. I rarely have 2 1/2 hours to cook a meal. I took 4 chicken breasts bone & skin on. Spray pam on shallow 11X 13 baking dish. Thinly slice medium onion. Line pan with onion, place chicken breasts on top of onion. Baste with olive oil. Sprinkle salt, pepper, some garlic powder, sprinkle dried rosemary crushing some to get flavor.Cook at 350 about 45 minutes, basting about 3 times every 10-15 minutes. Drain some of the juice after cooking 45 minutes,reserve, turn temp up to 400. Baste and cook another 15 minutes this makes skin crispy. While chicken is cooking microwave 4 yukon gold potatoes. After chicken has cooked 1 hour remove breasts to a platter. Leave onion and drippings in pan. Chop potatoes into bite size pieces. Stir into onions and drippings. I served it with some yellow squash and zuchinni thinly sliced and cooked on the grill brushed with olive oil, salt,pepper, and garlic. You don't have to grill but it gives them a good flavor. Used aluminum foil with holes poked in it to line the grill. Great meal in one hour if you do the potatoes and veggies while chicken cooks.
