My cooking triumphs
I'm 100% self-taught and launched into cooking out of necessity; my five kids got sick of eating prepared foods, and I was very ashamed to be living in the South without a lick of cooking talent! Since I love eating Southern food the most, I decided to start there. First goals were learning to fry up chicken and pork chops. I learned to make homemade creamed potatoes and gravy. And I've learned to make cooked vegetables with a decent Southern flavor! My dad was an expert Asian/Hawaiian cook, but he passed before I had a chance to learn from him. My second cooking goal was to learn to make local Hawai'i staples, like Lemon-Shoyu Chicken, Musubi, Banana Bread, Haupia, and Teriyaki Wings. My latest goal is to learn to cook some decent Cajun food, which could be a lifelong endeavor, depending on who you ask. I've got Shrimp Creole down to an art, but I'd really like to learn to make a decent Gumbo!

Lasagne Verdi al Forno
My husband made this lasagna last night, and I swear, it is the best lasagna I've ever had in my entire life. WOW, the bechemel sauce was awesome. Hubby used Italian sausage instead of ground pork. He doubled the tomato sauces and cheeses in order to make more (family of seven here). And he added fennel and garlic. The herb flavor was outstanding. Hubby comes from a family of Italians, so he wanted to make something authentic. Lemme tell ya...this is as good as it gets!

Green Bean Casserole I
Oh, wow! How EASY! All the holiday hype about green bean casserole, and I thought it must be something incredibly complicated. Our family LOVED LOVED LOVED this recipe. They passed the picky eaters in this house, so that says something big. I did modify just a bit. I topped with shredded cheddar cheese and buttered breadcrumbs. Delicious!

Buttermilk Pancakes II
OH-yeah. These are just what I was looking for. Downhome taste and fluffy texture. These are how "Mom's pancakes" should be made. This is the first recipe I've used that resulted in pancakes with some substance and personality.
